I feel like Brussels sprouts are one of those “love them or hate them” foods, and with good reason. If you don’t cook them well, Brussels sprouts can be bitter, mushy, or super smelly 🤢 but when you roast them, they become crispy, sweet, and delicious! The balsamic vinegar in this recipe helps bring out the natural sweetness.
Did you know that a serving of Brussels sprouts packs even more vitamins than an equivalent serving of kale? They’re packed with vitamin C, vitamin K, B vitamins, choline, manganese, potassium, and fiber. Brussels sprouts also boast one of the highest levels of folic acid of any fruit or vegetable out there! •1 lb fresh Brussels sprouts
•1 tbsp canola oil
•1 tbsp balsamic vinegar
•1 tsp honey
Preheat oven to 425F. Slice ends off sprouts and cut in half. Toss with oil, vinegar, and honey. Spread on nonstick cookie sheet and bake 30 minutes, stirring halfway through.
