I’ll just call this my Red Table Period, like Picasso’s Blue Period. Arugula with bell peppers, firm tofu, and wasabi peas, topped with sesame seeds, sesame oil, and soy sauce as dressing.
Been thinking about that meme that everyone’s reposting about buying a bag of salad mix to throw away after 2 weeks.
Do you throw away a bag of salad mix because of one rotten leaf? Don’t! This week, I had a bag of arugula with a few yellow leaves. Yes, it’s true when it starts to yellow, that means it’s not as fresh and some of the nutrients have leached from the leaf. But that doesn’t mean it’s no good! Do you really want to waste your money and throw it out? Pick out those rotten or yellow leaves. You can still make a salad and eat it immediately, or cook it up and eat it later. That’s one of the reasons I prefer to buy spinach or arugula over salad mix or lettuce… because you can cook it up at the slightest hint of spoiling to prevent food waste and still get your leafy greens in your diet!
