Wake and bake - VEGAN pineapple and cornbread muffins from @islandpokeuk cookbook. I love the idea of these. Unfortunately I misread the recipe and didn't put enough liquid in and the texture was a bit dry. 😶 still edible and nice flavour.
This a new cookbook for me - I picked it up at my go-to lunch spot in canary wharf. I like the vegan poke the best! Most of the book is savoury but there is a few sweets like this one. 😍

•cosa compro di solito?
Diciamo che non sono una persona che compra fissa le stesse cose, ma bene o male prendo sempre le stesse cose.
Avendo a casa già 12 uova, e del pesce in freezer, non ho preso molte proteine. A parte questo dettaglio, quando faccio la spesa prendo sempre dei latticini e, tranne il Philadelphia ( anche quello alla greca mi piace molto ), scelgo sempre quelli interi. Principalmente ricotta, yogurt intero, primo sale. Il burro compro sempre quello porzionato anche se che è uno spreco allucinante di involucri e plastica, ma lo trovò più pratico ( non esco scema ogni volta a pensarlo e si mantiene meglio ). Come carboidrato non sono una grande fan della pasta e quindi preferisco il riso, prima prendevo il basmati ma questa settimana con mamma ho mangiato quello normale e mi è piaciuto parecchio. Anche il cacao amaro, ho sempre comprato quello Perugina ( anche per una questione economica ), ma quello Alce Nero ha proprio una marcia in più, è molto più amaro e aromatico. Costa di più, ma ho preferito usarne meno ma appagare di più il palato. Per i panki, la farina di grano saraceno perché ha una marcia in più, e i frutti di bosco congelati da mettere un po’ ovunque. Last but not least l’avocado perché....perché è buono. ~voi cosa comprate di solito?~

🌱Scrambled Tofu & Celery Brown Rice Fusilli Pasta

This pasta was amazingly good. I made this pasta with:
1. Brown rice fusilli pasta (for 2)
2. Firm Tofu (boiled & scrambled)
3. Celery, yellow bell pepper, scallion, button mushroom, onion (lightly sautéed)
4. Baby orange bell pepper & cherry tomato (mixed in after cooking).
5. Vegenaise 1tbsp, nooch 1tsp, yellow mustard 1tsp, sea salt 1/2tsp and pepper 1/4tsp.

A couple of people have asked to the recipe, so here you go 😍 carrot cake porridge!

* 50g of oats
* 200ml of milk (I use coconut 🥥)
* 20g sultanas
* 45g grated carrot
* 1 tsp of cinnamon
* 1 tsp of nutmeg
.
Mix together in a pan & heat, then top with Greek yogurt and seeds 🥕👌🏻.

Roughly works out around 450 cals per portion, but you could easily alter it to be more or less depending on your goals 🙌🏻 let me know if you try it 😍 #recipe

I’ve said it before and I’ll say it again, @nadinelevyredzepi’s sea salt and white chocolate chunk brownies are the best brownies of all time.
They’re so moreish and, with the sea salt there to stop them being cloyingly sweet, you can really go to town on them!
I’ve cut this batch up into bite-sized chunks for ease of handing out at a party later. I hypothesise that guests will eat more per person in this format than if I left them as full-sized brownies. What do you reckon?

Für den Teig
- 380g Dinkelmehl
- 200g Margarine
- 1 Prise Salz
- 1 Ei - 8 EL kaltes Wasser
Für die Füllung
- Süße nach Belieben
- 5 EL Speisestärke
- 1 Prise Salz - Zimt
- 700g Heidelbeeren - 25g Margarine (geschmolzen)

In meinen Story Highlights findet ihr ein kurzes Video zur Zubereitung. Die Zutaten für den Teig verkneten und dann 3/4 davon teilen. Wenn man ein Nudelholz besitzt, dann sollte der Teig ausgerollt werden und in eine passende und eingefettete Form gelegt werden (ich hab ihn einfach in die Form gedrückt😄). Die Zutaten für die Füllung einfach vermischen und in die Form auf den Teig geben. Das ganze bei 170°C für ca. 40 Minuten backen lassen und fertig. Schmeckt super mit Vanilleeis oder Sahne 😋

•APPLE CRUMBLE FOR BREAKFAST 🍎🍏?• Not exactly..I’m having apple and blackberry baked oats with an almond butter drizzle this morning. Less than 5 minutes to prep, 20 minutes in the oven and here we are. If you hadn’t already gathered, I’m really into baked oats at the moment - love the fact that you get a bit of extra protein with the egg in and it tastes like pudding for breakfast! And it is soooooo simple. In fact it’s FOOLPROOF. Just use the basic recipe below and just add what you like - I added 2 grated apples, some cinnamon and blackberries to this and it was gorgeous, especially with that almond butter ❤️. What are you waiting for? ..
Recipe (serves 4)
2 cups oats
2 cups milk (any type)
2 eggs - beaten
..
Mix all the ingredients together (plus whatever extras you’re using eg fruit, cinnamon, chocolate chips etc) and bake in the oven at 180 degrees for 20-25 minutes

It’s been a lovely Saturday filled with baking in our household. My son had a friend over and they asked for cookies. So we wipped up these super easy spelt choc chip cookies (thanks @heidiapples for the recipe inspo!) I used wholemeal spelt flour instead of regular (because that’s all I had in the pantry) and all I can say is OMG! Took real will power not to demolish the entire batch in one go! #firstworldproblems

Yummy! Breakfast is Baked Banana Pancakes with Mini Jammy Dodgers 4sp!
1 mashed banana, 2 eggs, bit of vanilla extract and bit of sweetener, topped with Jammie Dodgers. The fruity looking swirls are raspberry coulis Pop in the oven for 10 mins.

It could have been 0sp if I'd used fruit but I love a Jammie Dodger! 👌😍👍
