I’ve decided to have sweet potato pancakes for lunch (hence breakfast no. 2) after weightlifting because I love them so much and they feel like such a treat! I don’t usually do Oly on a Sunday but seeing as we’ve got nothing planned I thought I’d treat myself to that too. Funny isn’t it, the things that we consider a treat? 😆

Happy Monday friends! Monday’s are a beautiful day because it is another opportunity for a fresh start. (Every day is a fresh start opportunity, but Monday’s are so juicy 💁🏼‍♀️☺️). Many of us fall into the weekend-warrior category. A few too many drinks, some “less than ideal” food choices, and maybe lack of sleep. Leading us to perhaps feel less than sexy come Monday morning. .

Truth is, I used to feel guilt and shame every Monday.. regretting my decisions to not be a glowing vision of 7 days per week... but then things started to shift... .

people started to message me, or even come up to me in person and tell me how inspiring and refreshing it was to see someone practice balance in their own life. Showing them that’s it’s possible to go out, drink, eat food off their regular diet, and still be able to work towards their goals and make progress! And that’s exactly it!! It clicked. Living your best life doesn’t have to mean living your PERFECT life. It’s about finding a life that is both MAINTAINABLE, AND ENJOYABLE 💗🙏🏼 . .

Behaviours of restriction, guilt and shame never lead to positive behaviours. You owe it to yourself to create a life you truly love. If that means an occasional weekend, then hunnie, YOLO your heart out and crush your goals on Monday morning. You got this. Smoothie bowls for dinner dates are where it's at in my world.

This beautifully colored combo featured: - 1 cup wild blueberries
- 1/4 avocado - 1/2 a small zucchini squash
- 1 beet
- splash of coconut milk
- 1/2 a cucumber
- 1 scoop vanilla protein powder by @sunwarriortribe
Blend till smooth then add a topping of fresh blueberries, coconut kefir, alfalfa sprouts and organic candied ginger that I like to rinse under water to remove the excess sugar.

Share something like this with someone you love and feel the nourishment enrich and enliven your cells!

Tacos Monday! 🌮 .
Ok, ok, it’s supposed to be “tacos Tuesday” but we fancied them today, so there, deal with it instagram! 😉

I’m trying to be creative with my kitchenless cooking and a client of mine gave me the idea of doing tacos 🌟
.
I didn’t quite do them as the recipe and ended up doing them my way with fresh tomatoes, avocado, ricotta (needed using up), refried beans and lashings of chilli sauce! 🌶️
.
I LOVE refried beans, which, did you know, aren’t fried at all. My client ended up catastrophising over eating “refried beans”, which she thought were fried and “really bad for you”. 🥑
.
Refried beans are only a poor translation of the Spanish name, which I believe, means “very fried” when in fact the beans are not fried what so ever in most cases. Pinto beans are boiled and mashed and can sometimes be baked or fried but most of the time they are neither 🤷‍♀️
.
Anyway, pinto beans area great source of fibre and folate so hardly something to be feared of... 🙌
.
Be careful of the facts you don’t check, the truths you accept or the stories your ED makes up. Those are often based on nothing and only serve to make you more anxious about food and restrict more 😡
.
Now I’ve given a heads up, you know what you’re having for dinner tonight, don’t you?! 🌮🌶️🥑

I love me some simple salads! This one was thrown together with the bits and pieces in my parents' fridge while I was visiting. If I try and make a salad too complex I'm less likely to choose it when deciding what to have for a meal. ⠀

This one was fresh greens and peas from the farm stand with carrots, cucumber, and tomato. On the side is avocado, some goat cheese gouda, and Italian meats. I drizzled the whole plate with olive oil and balsamic vinegar. Perfection!⠀

Sometimes I have to remind myself to not get too tied up in putting together fancy plates - simple is best and it tastes great too!⠀

"Oats Uppma Sizzler with Vegetable Stew" {South Indian Sizzler} 😋😋Coz it's dinner time. A very, very Healthy Fibrous Nutrient rich platter with Aromatic flavors & a lil creamy gravy, thanks to the coconut that makes it Vegan. I've paired it with Uppma, it can also be served with steamed rice. #somethingnew 💯% #recipedeveloper

UPPMA :In a pan, add 1 tbsp ghee, followed by mustard seeds, udad dal, peanuts, curry leaves, green chilli. Add 1 cup semolina & 1/2 cup oats.Roast till slightly brown in color.In a bowl boil 2 cups of water - add salt. Pour boiled water + 1 spoon plain curd to Uppma & stir gently on a low flame to avoid any lump fornation & till it gets a shine & moisture gets absorbed. Squeeze in 1/2Lemon juice.

🌈Stir Fry Veggies :I've added 1 cup Brocolli🥦 + 1 cup beans & Peas +1/2 cup bell peppers + 1/2 cup baby corn🌽 Throw in any vegetables, it's still a Hit recipe👩🍳 Chop all the vegetables & blanch it with a pinch of salt. In a pan, add 1 tsp of coconut oil, add all veggies & sauté for 1 min. Coconut milk is made by grating fresh coconut🥥mixed with water & then the milk is squeezed through a muslin cloth. To the pan add thick Coconut milk & spices - clove, cinnamon, black pepper, ginger chilli paste, salt. Cover the pan & simmer for 1 min. Stir from time to time or the mixture may stick to the bottom of the pan. Few Basil leaves 🌿 are magical. Serve this rich gravy full of veggies with Uppma & relish this Warm Cozy Platter of Healthful Ingredients 😊

I have been using @goodfoodforgood date-sweetened ketchup for years, so when they recently came out with two new barbecue sauces, you know I was in line to try them 😎 .

We used the classic sauce on our grilled chicken the other night. It’s so nice to have the comfort food taste of barbecue sauce without thinking about all the added sugars! . (On the side: sautéed shaved brussels sprouts and cauliflower in garlic and lemon + sweet potato fries) .

How much coffee is safe to drink? EU recommendations dictate that 400mg caffeine daily is safe for most people to consume (unless you are pregnant). This equates to 4 small cups of fresh coffee, or 6 cups of instant coffee. However, bear in mind that you are not most people! We each have unique ability to metabolise caffeine. You can have your genes assessed (specifically the CYP1A2 gene) to determine how caffeine-sensitive you are, or you can simply listen to your body. If you feel jittery, stressed or irritable—or if you develop a headache or a fast heartbeat—you've likely had too much. I find that many people do well with a single cup of high quality, freshly brewed coffee. It's best to drink it in the morning—and in a relaxed state!

In line with @pushdoctor campaign, I have been tasked with the challenge of showing you guys some of the key nutrients needed to boost 3 vital organs of the body: the brain, the heart & the gut. First off, the brain! Below are just a few of the key nutrients I strongly reccomend trying to incorporating into your diet where possible.

Omega-3s: The omega-3 fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) are critical for normal brain function and development throughout all stages of life. These fatty acids are needed for the maintenance of normal brain function. They are abundant in the cell membranes of brain cells, preserving cell membrane health and facilitating communication between brain cells & neurotransmitters - the control centre of the body.

B-Vitamins: In a recent paper, it confirms that all eight B vitamins are involved in brain function, including energy production, synthesis and repair of DNA and RNA, genomic and non-genomic methylation (brain regeneration), and the synthesis of a wide variety of neurochemicals and signalling molecules (neurotransmitters - the bodies chemical messengers!)

Zinc: The ability of zinc to modulate both ion channels and synaptic plasticity predicts that it plays a key role in learning and memory. Zinc has positive effects on brain function, psychosocial and cognitive performance.

Calcium: Calcium is an important part of the electrical signals within the nervous system, and it may actually help us to better understand why we age. When a chemical signal arrives at a brain cell, it's the job of calcium ions to deliver that signal from the outside of the cell to the inside, through the joining of important proteins. These proteins are activated by calcium and cause various changes in the cell, including the cell turning on new sets of genes.

August got me like 🍁. The promise of a new school year always gets me giddy, but this year it’s for a different reason. My kids are starting kindergarten and I won’t be returning to the classroom. This is going to call for ALL DA ☕️. Make this fall iced coffee in your blender.
10 oz fresh brewed organic coffee
4 oz organic almond milk
1/2 cup ice
A little shake of Ceylon cinnamon

We were back berry picking again this weekend as it is the season for elderberries! We were the only people out in the elderberry field, which makes me think these little black berries must still be underrated.⠀

Elderberries cannot be eaten raw and must be cooked first before any consumption. This will be my first year experimenting with them myself, but I already love adding elderberry syrup to some sparkling water for a delicious drink.⠀

While more research still needs to be done, elderberries are said to help boost the immune system and protect the body from cold and flus, and help fight them off quicker when they do occur. I personally found that taking the syrup when feeling run-down in the winter did help me stay cold-free! This is likely due to their high concentration of vitamin C, and elderberries are also a good source of vitamins A and B6 as well as potassium.⠀

It might be a bit early to talk about cold and flu season, but now is the time to get your hands on some fresh elderberries and try making some syrup yourself! I'll keep you posted on how it goes for me 😜

Scientists compare feeding flax seeds to your gut lining to putting manure on a field (maybe not the prettiest of pictures, but you get my drift 😆) meaning to say they are super NOURISHING to the gut.
Pretty interesting considering the gut is 80% of our immunity and is thought to be the ‘second brain’ 🧠

We might have had a drop in temperatures the last couple days in Belgium, but it's still summer and therefore still barbecue season! I like to keep some different dips on hand so that a crudité platter can quickly come together. Then we have some healthy snacks to munch on while relaxing outside and waiting for dinner to be ready!⠀

This might look like guacamole, but it's actually a delicious green pea and ricotta dip! I found the recipe from @lidlbelgium - just google "dipsaus erwtjes ricotta" (and for the non-Dutch speakers plug it into google translate!). It's a super easy recipe and perfect for these summer days.⠀

I'm back from holidays and really feeling the need for vegetables and fresh food at every opportunity. There was very limited choices away and I struggled a bit with lack of variety in fresh foods.
We ate so much more pasta, bread, cheese, chips and booze than I would normally have and I'm feeling a bit sluggish. It was a brilliant holiday though, so nice to get away.
This week to get back on track I'm aiming for 7 a day at least, reducing carbs a bit and getting exercising again to regain my energy. I've also restarted my kombucha bug pets so loving having those again too!

Okay this is NOT AIP for obvious reasons, which are the nightshades. But somehow in my fridge I discovered a bell pepper and tomato from the local market, and two containers of olives. So what's a girl to do?! Make one of her favourite childhood dishes, of course!! Baked with chicken breast and plenty of mediterranean herbs and balsamic vinegar. Steamed rainbow chard with nutritional yeast and coconut oil. Growing up, my mum would make this for me on my birthday, and add huge slabs of feta cheese. Even without the dairy now, it's still amazing. 😍🤤

My fave warming breakfast at the moment... especially on rainy days like today 🤤 gluten free buckwheat + chia toast, plenty of grass fed butter, refined sugar-free baked beans, and vegan halloumi (trust me - so weirdly addictive) 🙌🏼
This meal is high fiber and high in satiating, nourishing good fats. And quite frankly is delicious! Did you know baked beans count as a serve of veg towards your five a day? 💡 What is your go-to breaky of late? I need inspo because I’m trying to eat as much of a varied diet as possible 😊

Happy Friday everyone :) Getting up to anything cool this weekend? My sister and her man are coming to visit me and we have a few fun things planned 🤗 However, it's supposed to rain all weekend here in Van, and I get that we totally need it, but it also kind of gets in the way of outdoor activities. 🙄🌧️ At least we will have these Blackberry Tarts to keep us happy! I made a buttload, and because of my lack of baking skills I'm actually super proud that they turned out as well as they did! 😄😋

Picking fresh blackberries is part of the summer theme for me, as it likely is for a lot of you, too! I cant help stopping to pick the juicy berries as I walk past the miles and miles of thorny bushes, and then I end up with insane amounts and have to get creative with them. 🤷‍♀️ Aside from eating them straight from the bucket (a lot) these past couple weeks, I've tossed them in salads, smashed them on toast, blended them into smoothies, and of course, made these delectable tarts. 🤤🤤

What’s for dinner in your house? I’m gonna be real, a combination of jet lag, being up all night with a jet lagged toddler who has learned to escape from his crib, pregnancy, and ridiculous heat has wiped me the hell out, so the nice people from @foodora.se are gonna be delivering my dinner tonight. .

This is definitely my all time favourite smoothie; I make it at least once a week and should probably consider it one of my comfort foods 😂 It reminds me of the chocolate chip banana muffins my mom use to make when I was growing up whenever she had over-ripe bananas left over. My extra ingredient that I think really boosts this smoothie? The walnuts! Plus I also secretly like foods that physically resemble the part of our body they are beneficial for - in this case, the brain! Walnuts are a great source of omega-3 fatty acids which are anti-inflammatory, as well as antioxidants. They're also a great source of various micronutrients such as vitamins B6, B9 (folic acid), and E, and the minerals copper, manganese, and phosphorus. ⠀

Back when I was stuck in #dietculture, I supported calling out companies for using "junk food" to raise funds, particularly for health-related causes.

The reality is, one cookie or Blizzard is not going to make or break your health. While I know this is more a marketing campaign than a good cause, and I wish organizations could be a little more creative in their fundraising efforts, I won't say no to some ice cream on a hot day! (Though I did find it sweeter than I would like) #miracletreatday
