I have always had a love for poetry. Mostly the beauty that words can bring when they are written down and come to life. I recently watched an interview with Iggy pop and Anthony Bourdain and the words spoken by Iggy gave me chills, when Anthony asked him, what’s the perfect day in Miami? And this was his response ✨👇🏼

After coming back from the yoga retreat in Spain where @loladucout and I prepared breakfast, lunch and dinner for 19, I seriously needed a break from cooking. So after a week of salads, hummus and veg I felt a really urge to cook today. This almond crust quiche was a real winner with our guests. Today, I made it with roasted broccoli, sundried tomatoes and feta. Love this crunchy gluten free base! You can find a version with a hazelnut crust on my website. Xx

Growing my own veg was always my dream/goal. I am still learning with the help of my 80 year old grandma who comes from Lithuania every summer to help me work with very clayey soil. But I am very pleased that this year my strawberry crop is perfect! Did you know that strawberries are great source of fiber, vitamin c, folate and potassium, they also low in sugar! Todays brunch was 👌😋 we may have waited an hour to get in (systems in the kitchen were down) but @caravanrestaurants it was worth it. I had the jalapeño cornbread with avocado, chorizo and eggs. @laurawolstenholme went for the ham hock eggs hollandaise, and @imogenhamilton went for the savoury waffle. I would highly recommend visiting!! .

I’ve been having this for breakfast lately. Seriously. Pasta + kale + pesto🌿 I don’t have a precise recipe but the pesto is basically a handful of basil, a slightly smaller handful of parsley, an even smaller handful of cashews, a few scoops of nutritional yeast, a pinch of salt, and a few good glugs of @chosenfoods avocado oil all blended together! You can still have sweet things even when you're trying to eat less sugar. Making simple swaps like switching your yogurt to unsweetened and reading the sugar content on your granola label makes all the difference. It's all about awareness of additives in everything you nourish your body with, and balancing it out throughout the day. 💋

✨💪🏼CLEAN BULKING💪🏼✨While the majority of my clients come to me with the goals of healing their digestion and losing weight, I still see my fair share of men and women who want to gain weight, build muscle, and keep their fat gain to a minumum.

There are obvious benefits to bulking, just as there are benefits to cutting. The benefits of bulking include having more muscle mass, enhanced strength gains, improved physical performance, and an increased metabolic rate which allows you to eat more calories just to maintain your weight! (my favourite part haha). To bulk means to grow, or in other words become more anabolic. Anabolic is the opposite of catabolic. When you are anabolic, you are in a state of building and growth. When you are catabolic, you are in state of breaking down such as when you are dieting. When you are in a bulking phase you are mostly anabolic. Anabolic hormones include testosterone, insulin, and growth hormone. To get the most out of these hormones there are a few things you should remember and implement.
1️⃣Do not over-train. Cortisol (stress hormone) becomes elevated when we overtrain. Cortisol is a catabolic hormone. This Is detrimental to muscle growth because cortisol actually blocks testosterone’s influence on muscle growth. Vitamin C after a workout helps to increase the rate of clearing cortisol and enhance recovery.
2️⃣Resistance training increases testosterone production, especially when training larger muscle groups like legs and back. Don’t skip leg day.
3️⃣Get adequate sleep! During sleep, your body produces a ton of growth hormone. Getting at least 8 hours of sleep every day is essential to muscle gains and tissue repair.
4️⃣Use insulin and carbohydrate consumption to your advantage. Insulin sensitivity means that your body can more efficiently use glucose as an energy source instead of storing it in fat cells. This is beneficial when engaging in physical activity such as weight training to grow, while keeping fat storage to a minimum. Insulin sensitivity is highest post-workout and in the morning. Reducing stress and getting enough sleep also improve insulin sensitivity.

Asparagus is an excellent source of vitamin K, folate, copper, selenium, vitamin B1, vitamin B2, vitamin C, and vitamin E. It is a very good source of dietary fiber, manganese, phosphorus, vitamin B3, potassium, choline, vitamin A, zinc, iron, protein, vitamin B6, and pantothenic acid.

Does anyone else have scary childhood memories of being given a plate of over boiled broccoli to eat with dinner? Well, this is not your Grandma’s broccoli! There are endless ways to dress it up as we’ve done here with a drizzle of @parallel_brothers beet sesame butter, za’atar, and lemon. Yum!

Broccoli is not only delicious, but contains the compound sulforaphane that has been studied for its role in preventing and slowing down the growth rate of cancer.  High amounts are present in raw, chopped broccoli, so it’s a great one to pile up on your vegetable platters.
.
A study in the Journal of Agricultural and Food Chemistry even showed that letting broccoli sit for up to 90 minutes after cutting it into small florets increased the amount of sulforaphane. Pretty amazing stuff.

I made the dough with white and buckwheat flours for added goodness. I spread it very thinly. The cheese is a source of protein and calcium and there was lots of vegetables on there...

Lunch today is... Salsa tofu scramble on greens (recipe below). Working from home today and feeling hungry but also a little lazy, so I threw this bowl of deliciousness together in about 15 minutes. I always have firm tofu and salsa on hand for such an occasion.

Recipe: Sauté a chopped onion in a little oil in a skillet over medium until soft. Add cubed extra firm tofu (gently squeeze out some moisture before chopping) and stir. Add 2 Tbsp nutritional yeast (optional but yummy) and 1 tsp turmeric and stir again. Cook, stirring, for 3-4 minutes. Stir in 2/3 cup salsa (I used fresh salsa) and stir until combined and warmed. Season with salt and pepper and serve on a bed of chopped greens. I also added some chopped fresh snow peas that I had on hand, but you can omit or substitute with chopped bell pepper or another fave.

Dinner time!
These yummy stuffed peppers need a few minutes in the oven before they'll be scoffed down with a glass of 🍷! 😋

They are stuffed with broccauli (see what I did there? 😜) rice, mixed with chorizo, red onion, cauli leaves, mushrooms, home made sriracha sauce, feta cheese, majoram, oregano and magic mushroom powder, and topped with parmesan. Served with a green salad from the garden.
If you have fussy eaters who are afraid of veg, then this is a good dish as it doesn't feel like you are eating veg, while you are! 😃

If you don't eat meat, replace chorizo with lentils. You choose! 😍 👌

This #FactFriday is all about TURMERIC!
#Turmeric is claimed to be the wonder spice, with the potential to cure all manner of disease. But the claims may have gone too far.. #Curcumin, found in turmeric, has been cited in the literature for curing and preventing a range of diseases, including some cancers.
BUT, there are some issues with the research:
First of all- most of these studies have been carried out on animals, and so the potential benefits are unlikely to be produced in humans.
Secondly- These studies usually administer curcumin, rather than actual turmeric, and the dose given was large. That means you won't have much benefit by just adding some turmeric to your weekly curry.
What's more- Turmeric has poor bioavailability in humans, i.e. we don't absorb nutrients from it very well, so we won't get much of the curcumin in food anyway.
Moral of the story- Turmeric is a lovely spice to add to lots of dishes, but it won't banish disease. We need lots more research on curcumin to find out if the extract does have some application to health, so don't go spending your money on supplements!

What’s green and minty and refreshing AF? Cucumber Mint Slushies, of course! These bad boys are packed full of cucumber, mint, and freshly squeezed lime juice, sweetened with a touch of honey, and finished with a pinch of pink Himalayan salt for minerals and because drinks with a bit of salt can actually be more hydrating than those without. My children adore sausages and have asked for sausage and zucchini risotto for dinner....which is fine but for the fact that I’m currently testing a nutritional protocol and can’t eat it 😢 So at this moment I’m stirring away at my rice and soaking up all the beautiful aromas, otherwise known as window shopping in the kitchen 😂.

A little vegetarian plate for lunch: courgetti, rocket, tomato, olives, hummus and homemade falafels.

Since many ask, here’s the recipe for the falafels - this is the cheat’s version btw, not the real deal. The real deal is lovely but takes a lot more time and sometimes you just wanna eat!

1 tin chickpeas - drained and dried in a cloth
1 fat clove of garlic
1 handful of fresh parsley
1 tbsp. Ground cumin
1 tsp. Ground coriander
1 pinch cayenne pepper
1 tsp. Bicarbonate of soda
1 tbsp. Coconut oil
1 generous pinch of salt

Place everything in a food processor until mushy

Roll into balls the size of walnuts
.
Place on a baking sheet and in a moderate oven for 30min or so.

Mid morning snack. Doesn't have to be more complicated than this. Mozzarella ( worth buying the organic one) watermelon, peach, strawberries and an egg. A drizzle of olive oil mint and a sprinkle of sea salt on top. When you have a busy day ahead of you and perhaps with broken sleep behind ( me!!) plenty of good food is what is going to get you through the day.

Person Jim: “What happens when you eat gluten, Marissa?” Me: “Well let me tell ya Jim, it’s one shitty situation” 😏💩. .

But for real, after 7 years of being this is still the first question I almost always immediately get. So let’s break it down folks lol.

I don’t have celiac, I have a gluten sensitivity. There is a big difference. Celiac disease is a full blown allergy where your body literally sends an attack on your small intestine, specifically your microvilli, 🔪which are responsible for nutrient absorption. This leaves a person very sick and malnourished as their body isn’t absorbing the food or nutrients they are eating. This heightened immune response is mediated by igE antibodies.

A gluten sensitivity on the other hand, isn’t an immediate or full blown attack on your own body tissues. The response is often delayed, which means delayed symptoms.
So there you are, drinking your beer and eating your pizza thinking life is fine and dandy 👱🏽‍♀️👨🏼🍕and the next thing you know, it’s 2 days later, you have diarrhea, (or you haven’t sh*t in 2 days)💩😒 your stomach is in pain after big meals, you have headaches, brain fog, intense bloating and you’re in a bad mood. Often you’re left confused because you can’t pinpoint what the heck could have caused this. That’s the beauty of sensitivities. They’re mediated by IgG antibodies and the reaction is delayed.

These are just some of the symptoms that can present. Others include skin rashes, eczema, joint pain, depression and heartburn.

So what should you do if you think you may have a food intolerance? I recommend following a proper elimination diet. This is the gold standard as food sensitivity tests can often be expensive and unreliable. This is personally what worked for me. Literally after 2 weeks of being gluten free I felt like a whole new person👀🙆🏼‍♀️. It was actually sad that I forgot what feeling “well” felt like.

The kids are still asking for porridge in the summer now and again but I prefer overnight oats.

OO could be called summer porridge really: you get the nutrition and comfort of porridge but you’re not sweltering after and it’s even quicker to prepare, which means more time to sleep! 💤
.
Have you ever wondered what to do with that was almost empty peanut butter jar? There’s still some left but you can’t access it!! 🧐
.
Overnight oats is what you do: pour your oats in the jar, add some seeds, milk (in my case yogurt), do a little dance around the kitchen while you shake it and put it in the fridge and go to bed.
.
In the morning you will be rewarded with a creamy concoction that you can just pour in a bowl and to which you can add what takes your fancy.
.
I fancied banana today - we know banana and peanut butter works, right?!🍌 🥜
.
I’m all set for the day now. Got lots of things planned and a busy day so onwards I go!

A warming (& rather hidden) pumpkin & coconut yoghurt bowl to start off my morning. Not really a smoothie, definitely not soup, & hopefully nothing like baby food 🙈 Perhaps a Bircher/smoothie hybrid, if you will indulge me!
I blended pumpkin purée, carrot, avocado, @thecocotribe coconut yoghurt, activated buckwheat, linseeds, @gelatinaustralia collagen, cinnamon, ginger, nutmeg, cardamom, vanilla & stevia. Topped with essentially everything in my cupboard, apparently.
An absolutely colossal thank you to everyones super lovely & supportive messages on my post yesterday. What a rad community of beautiful humans I am part of! I truly, truly appreciate it. My day was overwhelming but incredible, & I relished every second. So thank you again, it really meant so much to me to read such kind words. The gratitude is palpable. Tonight we're eating these rainbow tempeh chard wraps. If you're looking for a great alternative to traditional wraps, swiss chard or collard greens are amazing options. Also a great (and easy) way to get in those greens! Grab our recipe 👇👇👇

Rainbow Chard Wraps:
Slivered purple cabbage
Carrots, sliced in matchsticks
Cucumbers, sliced in matchsticks
Red Pepper, sliced in matchsticks
Fresh basil leaves
1 bunch swiss chard
Marinated tofu, tempeh (or lean meat if you're an omnivore)

Directions:
1. Lightly steam the chard leaves.  Carefully cut out the large part of the stem.
2. Use 1 leaf for each wrap, place veggies in the center and roll it up.

What’s your go-to meal? This is mine: salmon cakes + whatever vegetable(s) I have kicking around in the fridge. I always keep a few cans of wild salmon in the cupboard for those times when, well, I have no time and need to make a quick dinner. So, here’s the recipe😉
:
2x 150g tins of wild salmon (with or without bones)
2 eggs
1/2 tsp salt
1 tsp garlic powder
3/4 cup gluten-free oat flour
1/4 cup almond flour
.
Drain the cans of salmon and add to a large bowl. Mash the salmon until broken down. Add the remaining ingredient and mix well. Place a flying pan over medium heat and add 1/2 Tbsp of coconut or avocado oil. Once melted, add formed cakes and cook until golden brown on each side. Store in the fridge or freeze in an airtight container (they freeze really well)! This recipe makes about 6 cakes🍽️

Black rice 🖤💜🖤💜 Have you tried black rice? It's my favourite rice that I've started using more in my cooking lately as its delicious and full of health benefits. It's got a good bite and nutty texture so doesn't go mushy or sticky.

It's full of antioxidant anthocyanins (so a great addition to a rainbow diet 🌈) plus other compounds with potent anti-inflammatory effects. It may reduce atherosclerotic plaque formation and improve cardiovascular inflammatory markers, hence reducing the risk of heart disease, as shown in rabbits and human patients with coronary heart disease, respectively.
Black rice is also higher in protein and fibre than other types of rice. Note that if you cook it with other foods, it makes your dish very dark in colour. 😊
Last night I made this spicy soupy stew with carrots, red onions, tomatoes, kale, black rice, quinoa and small prawns and had loads of leftovers. So tonight I just added a few extra cooked tiger prawns and served it alongside sauteed garlicky broccoli. Yum! 😋

Whipped up this luxurious strawberry chia pudding this morning. To make, add 2 cups of coconut milk, 6 tablespoons of chia seeds, 1 cup strawberries 🍓 (I used frozen) and 2-3 tablespoons of honey 🍯 to a high speed blender (like a vitamix) and blend until smooth. Pour into bowls or a mason jar and chill for 10 minutes to allow to thicken. Then top with whatever your heart desires and enjoy. I sprinkled some local bee pollen on top for extra allergy support. This recipe serves 2. Hope you enjoy. 💕🐝💖

Thanks to #leftovers and #conveniencefood, this dinner took me less than 30 minutes to make last night. I roasted a #salmon fillet straight from frozen for 15 minutes. Meanwhile, I chopped some garlic, stir-fried it with pre-cut #broccoli and some #peppers we had cut up a few nights ago and finished it with some black bean sauce we bought in HK. Then I heated up some leftover rice in the microwave and dinner was done!
