2019.11.14 before I settled on doing a variety of soups and various other bowl based mostly liquid sustenances over the course of the winter, I was going to do an entire month of chili, #chiliconbarney to be exact. I decided against it because variety is the spice of life, and there’s not a huge variance in chili styles offered in town. .

Tonight’s bowl was from @grumpysroseville and it’s good, though I meant to order it loaded, because let’s be honest, sour cream, cheese, and onion make almost everything better. I might revisit later to get it loaded.

2019.11.13 I’d unknowingly heard of kimchi stew long before I started regularly eating Korean food. Where? Harold & Kumar Go to White Castle. There’s a scene where Cindy Kim, trying to convince her crush Harold to go to a party says “Kenny’s mom dropped off a big pot of kimchi jjigae.” Kenny replies “It’s really good.”

Now, the serving size of kimchi jjigae at @donghaemn isn’t quite a big pot, but it is really good. Especially on the first day of appreciable snow fall in downtown Minneapolis this season. Kimchi, tofu, pork, a spicy broth, and a few rice cakes come out boiling hot in a stoneware pot. A small bowl of rice on the side to add to the bowl if you choose - I like to put a little in my spoon and then dip it in the broth. Large tablespoon and chopsticks for enjoying.

2019.11.06 If yesterday’s soup was indicative of Minnesota, today’s is all about our neighbors to the east. Wisconsin has a huge dairy industry and a lot of German heritage, that means an abundance of cheese and beer. Which leads to beer cheese soup. .

Looking like queso with popcorn floating on it at first glance, this roux thickened soup is ubiquitous in Wisconsin. I grabbed a bowl at @redcowmn’s North Loop location which arrived in a crock with a proper soup spoon. It’s thick, comforting, and each spoonful is familiar. Copious amounts of black pepper and dashes of hot sauce are its friends.

I tried searching for the best beer cheese soup in Wisconsin with very little luck. It seems the Sconnies might be too busy eating their soup to have competitions about it.

2019.11.12 lobster bisque is another example of a soup once predominantly consumed by the poor that - with the addition of time, scarcity, a change in cooking technique, and a fair bit of cream - has become considered refined and gourmet. A lot people are aware of the history of lobster in the United States and how it was considered food for prisoners and servants. I learned that’s primarily because when you kill a lobster too long before cooking it, certain enzymes are released that makes them unpleasant, and that’s how they were prepared. Once the numbers started dwindling and they learned to cook them alive or immediately after dispatching, BOOM, delicacy.

The bowl on offer at @mercurympls is good, but it’s a lot of soup with little textural contrast, so my mouth got a little bored. I think some crunchy croutons or a crostini toasted in butter with old bay would make it amazing.

The lipless bowl was greatly appreciated so the remainder of the soup could be consumed quicker once it had cooled. Proper soup spoon for delivery.

2019.11.10 one of the things I like about a lot of soups is that they were a food of struggle. A way to get the last bit of flavor from the meat that wouldn’t leave the bone. To use up the vegetables that grow in plenty but aren’t appetizing alone.

That’s one of the reasons I enjoy French onion soup so much. Onions were considered a food of the poor. Its origins are ancient, probably pre-Roman, when it comes to the broth and crouton, only getting its cheesy component in the 18th century. It wasn’t introduced to the United States until the late 19th, and didn’t gain a big following until the 1960s.

The second is this Bocuse Soup or la soupe aux truffes from @grandcafe_mpls . Named for its creator and arguably greatest French culinarian ever, Paul Bocuse, it was incepted in 1975 on the event of Paul being awarded France’s highest civilian honor by the president.

A flavorful vegetable broth with foie gras and truffles is served at a temperature that allows the truffle’s flavor to diffuse. The puff pastry holds in the heat and aroma until you break through with a spoon. .

I think thin broth soups and puff pastry are a perfect match, because what is puff pastry if not a roux in suspension?

2019.11.09 after asking about some Vietnamese restaurants that serve breakfast in the cities with an eye towards getting pho during its traditional mealtime, I ended going to Kim Anh Pastry and Deli, and getting Bún Bò Hué for the first time.

Fun fact about blood, you can use it as a 1:1 replacement by volume for eggs in a lot of recipes. One of the more interesting ways I’ve eaten this was in a flan. Knowing this and having that texture of blood before, I was all in on this spicy and sour soup with pork hock, beef shank meat, blood cubes, and meatloaf (like the meatballs in pho - a little springy but not as pronounced). Larger noodles than pho and fun to slurp.

Served in a large lipless porcelain bowl with a porcelain Chinese spoon and they’ll ask if you want chopsticks (yes). Typical pho table condiments. The veggie plate was sprouts, cabbage, lemongrass, and a lot of jalapeños.

2019.11.08 a few months from now a lot of restaurants will update their menus on Fridays to be more fish forward owing to Catholicism and the Lenten flesh fast. The soup menu usually ends up with some form of clam chowder. But probably not the one at @baldamar_restaurant given its bacon.

My dad and I don’t agree on a lot of things, especially when it comes to food. But we do see eye-to-eye when it comes to clam chowder. Always New England style, and if it’s on offer we have to get it. So I stopped in to recently opened Baldamar to try theirs.

Este pho me hizo muy feliz, llevaba todo el día sin comer y trabajando.
Este fue mi primer Pho en Vietnam (si me he visto súper lenta). Tenía sus fideos (que nada que ver con los que nomalmente se usan en occidente para hacer pho) muy parecidos a la forma del tallarín, pero de arroz.
Tenía su carnita y hierbas verdes que hacen que sea refrescante para el calor inferna que se vive aquí. También le agregué un toquesito de limón y fue perfecto.

This pho made me very happy, I had not eaten and worked all day.
This was my first Pho in Vietnam. It had its noodles (which are way different with the ones that are normally used in the west to make pho) very similar to the shape of the -tallarín (this one is in spanish because idk how to say it in english), but of rice.
He had his beef and green herbs that make it refreshing for the infernal heat that is lived here. I also added a touch of lemon and it was perfect.

2019.11.07 the first time I was eating pho I thought I was having a heart attack. Went to the ER and after a battery of tests, was given some industrial strength maalox and confirmation that my heart was fine. Turns out it was esophageal spasms.

Since that day I couldn’t count how many times I’ve had pho, it’s become one of my go-tos. It took me a while to visit Pink Flower for it, preferring to stick to places I’d been on Nicollet. Besides, I’d spent far too many nights at Best Steakhouse in the same strip mall as a kid. It was the place we went as a family. But now I’ll go on occasion, there’s others I prefer that I’m sure to visit this winter, but this is the closest to home.

I went with the combination bowl of rare eye of round, well done brisket, and meatballs. Served in a square no-lip bowl, it comes with the usual bean sprouts, basil, and lime wedge but no jalapeño. Condiments available were pretty standard: soy, hoisin, sriracha, sambol, and table sugar, no fish sauce. The broth has a barnyard-y odor, but no off putting taste; not especially strong, it needs condiments applied. Chopsticks and a Chinese spoon for implements.

2019.11.05 If there’s any soup that is so quintessentially Minnesotan, enough that it’s even been nominated to become the official state soup, it’s Wild Rice soup, most frequently of the chicken variety. It’s not exciting. It’s comfortably creamy and carby. And it always needs more pepper or some hot sauce. It’s definitely Minnesotan. .

There’s a number of spots in the skyways of Minneapolis to find soup, and I’m bound to try to get most of them. Max’s Cafe is one of the closest to the building I work in and it makes a typically expected version of this Minnesota staple every day. A “bowl” is served in a 12 ounce food grade cardboard cup with a plastic soup spoon and a few packs of saltines to amp up the carbs even more.

I’ll be honest and let you know that I’ve never been a big fan of this type of soup, but I try it on occasion in the hopes that I just haven’t found the right bowl. 2019.11.04 There was a time, probably up until a year ago, that if you were looking for me right after work on a Friday, I was probably at the low counter at @zenboxizakaya enjoying one of @ramenarchitect’s weekly specials. Sometimes it was was pork based, sometimes chicken, even the odd duck thrown in occasionally. It didn’t matter what protein constituted the foundation of the broth, you knew it was going to be a tasty experience. You also knew to arrive early because the specials more often than not sold out within a turn or two.

I still plan on visiting Zen Box proper for a couple of their standard varieties during the course of the next few months, but when I heard Chef John Ng was doing a pop-up at @lowryhillsmeats I knew that whatever was going to be offered would be special, and I didn’t want to miss it. I arrived a little before 5, when they were going to start serving, able to get my order in before an incessantly growing line filled every walkway in the butcher shop. There were two ramen on offer - both turkey & chicken broth based; a “Barnyard Ramen” that looked good, and a “Fiery Bird Ramen” that looked more my style. A spicy turkey & chicken bone broth, chilies minced with soy, some pulled chicken, half an ajitsuke tamago (soft boiled egg marinated in sweet soy sauce), some arugula for bitterness, a few dashes of a black garlic chicken oil, and all topped with a piquin chili bomb paste.

Served in the ramen bowl equivalent of a solo cup, with a plastic spoon, and bamboo chopsticks - it definitely felt like a pop-up and conjured fond memories of when Zen Box would do an annual ramen party called Ramen Attack. The broth was a little spicy, nothing overwhelming, and it was conveyed well by the noodles during slurping. It was a really good bowl. If I didn’t feel like my blood sugar was already high enough, I would have gone for the second variety too.

One thing I saw that I don’t think I ever have before? Zen Box doing to go orders of ramen. The noodles and accoutrement in the bowl with a lid, the broth in a separate container for destination application, similar to the way a lot of pho spots do it.

2019.11.03 This spot was a critical darling in 2018, garnering a mention on lots of best lists when it comes to new restaurants. Known predominantly for Vietnamese street eats, you might not expect to find a soup that’s a part of Thai, Laotian, and Cambodian cuisines (it’s actually from Chinese immigrants to Thailand). Geographical assumptions aside, @haihaimpls’ Khao Soi Gai takes up residency as one of the two soups on the brunch menu.

This edition of Khao Soi (either ‘cut rice’ or Burmese for ‘noodles’) Gai (chicken in Thai) is the northern Thai variant - a light coconut milk curry broth, egg noodles both boiled and fried, chicken thigh, shallot, cilantro, lime, and pickled mustard greens on the side (I always add them in - the crunch and hits of sour and bitter are a great contrast). Like a lighter massaman curry, the flavor is abundant, and there’s a variety of textures. I just wish there was more broth. Lipless bowl (for slurping), chopsticks, and a ramen spoon (I finally googled what that spoon is actually called, it’s a ‘Chinese’ or ‘duck’ spoon) make up the serving vessel and implements.

This is my go to dish whenever I find myself at Hai Hai during brunch. There’s just something about it. .

2019.11.02 Most of the soups I end up enjoying during this endeavor will be generally available, or at least at a place that has some form of soup available most of the time. This isn’t one of those soups and @eatwsk1 isn’t one of those places. Here you’ll always find great rice bowls, excellent takes on a burrito, and my favorite Brussels sprouts in town among other things. But, on occasion, they’ll throw something special up on their “features” board and it’s almost always worth getting.
.
Which is how I ended up here today eating Tres Dedos (three finger) “Chile Relleno” Soup. This is a playful reimagining of the traditional cheese stuffed, batter coated, and fried chile dish that the name conjures memories of. .
This time the batter coating is represented by expertly folded wonton skins that house a gooey melted smoked cheddar and float in a flavorful arbol chili, vegetable, and chicken broth that’s spiked with chili oil and copious black pepper with chunks of chicken lurking below. .
This thin brothed soup comes in a no-lip bowl, as all thin soups should, facilitating getting the last drop. WSK doesn’t usually do soup, so no soup spoon, but large tablespoons work in a pinch. $8.50 for what I’d consider an entree soup isn’t a bad deal. Definitely recommend.
(The rice went with another item but I tried a spoonful with the soup)

2019.11.01 as I’m wont to do once it gets dark and begins to get cold here in Minnesota, I’ve begun another theme. I do them to fight the monotony and resist the urge to hibernate. This winter I’m starting early and going longer than I did when it was an entire winter of wings. This year I’m going with something that is quintessential and inexorably tied to combatting the coming cold, soup. Bowls of warmth with variations innumerable from many corners of the world, no gazpacho or chilled soups if I can help it. I’ll also be doing various stews and chilis as well
.

When I got the idea for this theme I knew I was going to start with @trattoriamucci and their Mushroom Bisque. Funny thing about bisque, it used to mean thick crustacean soup, now it’s anything puréed with cream.

It’s the definition of comfort for me. Thick and creamy, earthy, with always crunchy focaccia croutons, slightly crispy fried rosemary, and a drizzle of truffle oil that amps up the earthiness. I almost always order the side of focaccia to go with because a spoon can’t get everything and it’s too thick to tip the bowl and drain. But a bread mop works wonders.

It’s $6 on the primi section of the menu and comes with a proper soup spoon.

🍜Bún cha
Está fue mi segunda sopa en Vietnam. La primera fue del mismo tipo, pero en otro lugar solo que tenía mucha hambre y me olvidé de documentarlo (je je je).
Bueno, esta es la Bún cha que está por mi casa. Bún cha es un tipo de -sopa- que tu armas, te dan el caldo y aparte los fideos y aparte verduras.
En el caldo viene carne molida que creo que es de carne y pedazos de carne de puerco (si no me equivoco). Le puedes pone ajo y chile (claro que le puse ambos), está muy rica y es súper económica 😍

This was my second soup in Vietnam. The first one was of the same type, but in another place I was just very hungry and forgot to document it (je je je). Well, this is the Bun cha that is around my house. Bún cha is a type of -soup- that your kind of make yourself, they give you the broth and apart the noodles and other vegetables.
In the broth comes ground meat that I think is meat and pieces of pork (if I'm not mistaken). You can put garlic and chili (of course I put both), it is very rich and is super cheap😍

Está ha sido mi última sopita en NY -hasta ahorita-.
Creo que en general fue una linda experiencia, es un lugar donde solo venden sopas para llevar; nosotros decidimos ir a comer a Central Park.
La neta la si estaba muuuuuuy rica, no era una sopa de tomate convencional, tenía también pedacitos de zanahoria y morrones.

This has been my last soup in NY - until now.
I think that in general it was a nice experience, it is a place where they only sell to-go soups; We decided to go to Central Park to eat.
It really was sooooooo good, it was not a conventional tomato soup, it also had bits of carrot and bell peppers.
Rating: 9/10

🍜Spicy hozon ramen
No les voy a mentir, al principio como que ni supe que había pedido y cuando me trajeron mi plato me decepcioné un poco. Eran noodles con garbanzos y bok choy, como de SOLAMENTE ESO.
Pero les juro que estaba súper súper rico! Toda una experiencia de sabor.
Calificación: 10/10

I am not going to lie to you, I was not sure what I had just ordered.
So, when the soup came I was a little dissapointed because it was just chickpea, bok choy and the ramen: JUST THAT.
But it was reeeeeeeelly good! A total experience of taste.
