Breakfast and dinner last night. Breakfast is parsnips, carrots, mushrooms and onions roasted with 2 eggs. So delicious! A new fave veggie is definitely parsnips. Dinner was bison burgers with air fryer potato wedges. Honestly so delicious. Taylor and I were both worried about the bison burger. I didnt think they'd turn out well but man! They are delicious. Topped with some crispy shallots and roasted brussel sprouts. Definitely a new fave!

Thank you for taking the poll I posted last week and helping me pick between cooking Shepherd's Pie or Pulled Pork. You picked the best and most delicious Whole30 recipe I've made to date, Pulled Pork.⁣

The only thing I regret is not making more. I used 2 pounds for this recipe but when I make this again I'm bumping it up to 4 pounds.⁣

This was really easy to make. I used a crockpot, my favorite kitchen tool because all you need to do is put your ingredients in the crockpot and then set it & forget it. ⁣

2 pounds pork butt⁣
1 1/2 tablespoon black pepper ⁣
1/2 teaspoon chili powder⁣
1/4 teaspoons ground cinnamon ⁣
1/2 onion, roughly chopped⁣
3 cloves garlic, minced⁣
green onions for garnish⁣
1/2 lime juice once it's served (optional)⁣

After a few days of lackluster meals (although still @whole30 compliant) , I really needed my plate to be full of color tonight. Isn’t it amazing how food can make you feel better?

**EASY MEAL ALERT*** This tuna was so quick and had so much flavor! I needed something that would thaw fast and was low fuss. I bought a big bag of tuna steaks at @sprouts to have on hand when we needed a high protein meal and tonight was that night! My 3 year old ate a whole steak! 👍🏼 Go get yo’self some!!

🐟 Marinate tuna steaks in olive oil, coconut aminos (a soy sauce substitute), salt, pepper (I only marinated for 10 minutes)
🐟 In a hot oiled skillet sear tuna for 2.5 minutes on first side and 2 minutes on the other side
🐟 This will give you a pink center. Cook longer in 30 second increments if you want it more well done

This guy was about the only good thing to come out of the wind storm we had a couple weeks ago. Our power was out and I had to get creative with our toaster oven. I made a small version of this and it turned out so well I decided I had to make a full sized version for you guys. Bonus is that it's both paleo and Whole30 compliant.⁣

The recipe uses only 4 ingredients (plus seasoning). If you're not a fan (or just can't find) romanesco, you can sub in cauliflower or broccoli.⁣

DAY 22! *que Taylor Swift song*
Today I felt so great! I had the energy to keep up with my kids at home on a snow day, straighten up the house, do some yoga and other at home workouts I get off of YouTube. Overall, such an amazing day ❤️ Breakfast- a nectarine, collagen black coffee, oven baked sweet potato crisps and bacon with apple chicken sausage
Lunch- turkey lettuce roll up with mustard and a bunch of fresh veggies
Dinner- crock pot pork, roasted mini potatoes, tomatoes and some green veggies (snow peas, green beans, broccoli, and zucchini)
Also ate some dates and grapes while I cooked dinner 😘

Day 6/7: It has been a weird few days for me. Going out with friends and having to plan ahead what I can eat and not ordering a drink feels different, but I learned about myself from it. One thing I did for me this week was trying to recipes and finally making the #whole30approved condiments. I definitely recommend doing that on Day 1 or before. As a side note, the emotional roller coaster is real and crying into your blender full of homemade ketchup is not something I would describe as a good time.
Good news though: I’ve kind of lost my appetite. Not my whole appetite. I’ve lost cravings and I’m satisfied with a reasonable portion of what I’ve cooked.

Not feeling well today. Getting through the entire day has been a struggle. Extremely upset stomach, headache, very tired... made a very simple dinner: turkey meatballs & sweet potato-cauliflower mash (pg 270, @whole30 #fast&easy). Day 18 #whole30 breakfast was a sausage and banana. Lunch I had leftovers and dinner was this amazing chicken, artichokes, and roasted garlic potatoes! I earned it after spin class tonight.

Cauli steak or regular steak? I’ll take both please 👌🏻 This #AIP + #Whole30 spread looks gourmet but it’s really not hard at all! Here’s how I threw it together:
1. Marinate the beef (1” thick slices of tri tip) with garlic, lemon, and rosemary (2-24 hours in advance).
2. Wrap the sweet potatoes in parchment and foil and bake at 350 for about an hour.
3. If cooking the beef in the IP, start that now to allow time for natural release. (Recipe is in my Recipes highlight.)
4. Steam the head of cauliflower on the stovetop for about 5 minutes to soften; carefully remove with tongs and slice into 1/2” thick pieces. (Steaming is optional, but I digest it better that way.)
5. Put the cauli slices on a lined sheet pan and brush with evoo; place in the oven to roast for about 30-40 minutes until golden.
6. Chop the kale and start to sauté over medium heat with some @naked_bacon fat and salt until starting to brown and crisp. Don’t forget to flip the cauliflower slices, which should be starting to brown.
7. If not using the IP for the beef, pre-heat a grill pan and then sear each side of the meat for 2-3 minutes. Cook to preference.
8. Top everything with a generous sprinkle of salt and some cinnamon on the potato, and savor every bite!

This doesn’t look appetizing AT ALL - I know, but it’s super good and I just wanted something easy to throw on a pan and put in the oven 🙃

1 lb bag of shrimp, frozen peppers, frozen onions, 3 frozen garlic cubes, 1/4 cup olive oil, oregano, cumin, chili powder, salt & pepper, and the juice of two limes. Mixed everything up in a bowl and poured on a sheet pan with foil. Oven at 475 for 10 minutes.

New recipe is up on the blog! 🌟 I love having different breakfast sausage flavors in my freezer for days when I just don’t feel like putting that much effort into making breakfast. One of my favorite flavors of breakfast sausage is chicken and sage! 🙌🏽 Applegate has been my go-to for a while, but they do have a super minimal amount of cane sugar in them. I knew I couldn’t miss out on this sausage during my Whole30, so I decided to make my own. I honestly think I won’t be going back to the breakfast sausage I used to buy because these are just so good! 🤤They are seriously so easy to put together and are filled with herby sage flavor! They are so perfect for making in bulk and storing them in the freezer for a later use! Tonight’s dinner- Air Fried Blackened Garlic Ghee Lemon Shrimp on artichoke leaves with garlic aioli and garnished with lemon wedges and parsley and a side salad (same as last nights). Keto friends this salad is not for you, sorry! In the salad there are roasted pecans, strawberries, mandarin oranges and topped with Tessemaes Balsamic Vinaigrette! Delicious!! So what do you do when you have a craving for stuffed cabbage but your hubby doesn’t like stuffed cabbage? You serve it to him as a soup😂and guess what?? Introducing these cute little stacked cakes I made over at my moms today! No these are not whole30, paleo, keto or low carb 😂! But when your mom offers to keep all the cousins and wants to make cakes and then You end up making the cakes this is what happens! I’ve never made anything like this and think they turned out so cute! You all know my kids whole30 with us but I of course will let them eat these cakes with their cousins because restricting fun and being that strict is not what we are about. Of course hubby and I will not eat this because we are adults and can make our own choices and stay strict but that’s not what childhood looks like to us! The kids loved watching these being made and can’t wait to eat them 😂🙌🏼 after they eat the cake today they are right back on track with whole30 with us. This is also how we approach friends Birthday parties- it is their choice to have the cake or not but they are 4 and 7 and only once has one of them turned down sweets at a birthday when on whole30!
