Oh hello hot stuff…the words I say whenever I see my bottle of @traderjoes jalapeno hot sauce. This was my first love before I was introduced to all the other amazing #whole30compliant hot sauces out there.⠀

This one is a little chunkier than any other sauce and packs a punch of flavor. I especially love putting this hot sauce on my hard boiled eggs! This guy gives the HBE something else….they go from bland to bam!⠀

This low carb Sausage and Cauliflower Casserole is the most comforting healthy meal you will ever eat! It is so easy to make too.

Sausage and Cauliflower Casserole

Ingredients

1 head of cauliflower, cut into florets
1 tbsp extra virgin olive oil
8 oz. Italian sausage, casings removed
1 medium yellow onion, diced
5 cloves garlic, minced
4 sprigs thyme
1 28-oz. can whole peeled tomatoes
1/2 cup almond flour
2 tbsp fresh parsley, chopped
Salt and pepper, to taste

Instructions

1. Bring a pot of water to boil. Add the cauliflower florets to the pot and boil for 3 minutes. Drain and rinse the florets with cold water. Set aside.

2. Preheat the oven to 350 degrees F. Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook for 8-10 minutes until browned, using a spoon to break into small pieces. Stir in the onion, garlic, and thyme. Sauté for 5-7 minutes, stirring regularly. Add the tomatoes and juices to the pan and cook for 5 minutes more. Add salt and pepper to taste.

3. Remove the skillet from heat and carefully stir in the cauliflower. Transfer the mixture to a 9x13-inch baking dish. Sprinkle with almond flour. Bake for 20 minutes, and then turn the oven to broil and cook an additional 3-5 minutes. Garnish with parsley to serve.

Dessert at family BBQ! My mom bought mini Nothing Bundt Cakes, which are the cutest and most delicious miniature Bundt cake treats ever!!!! They’re our favorite. They were looking at my all. Day. I know dessert is a no-no, but I ate this small plate of fruit to distract me from the birthday cake bundts. And the red velvet bundts. And the chocolate bundts. 🤤

Bf modeling our makeshift lunch😂 We spent the afternoon walking around Oak Glen farm with some of the fam. We didn’t think we’d be gone so long and didn’t bring any lunch😳 We were THIS close to ordering a hot dog and sauerkraut from this food stand, who refused to let us see the hot dog nutrition facts?🤔 But we resisted!!! We had an @epicbar dipped in mustard, surprisingly way more delicious that way, split an @rxbar, had some dried mango, and split a @nickssticks. Not the best lunch, that’s for sure, but we didn’t order the mystery meat so I’ll consider this a victory, hehe🤪🙏🏼😂

Mix it all together and what do you have?! My super simple and amazing chicken salad! Yum! Remember those chicken leg quarters? Well I’m pushing the limits with them today 😳 😂 I usually only keep chicken for 4 days but it tastes and smells just fine so today I’m stuffing my family full of chicken! Snack? Chicken salad. Lunch? Chicken salad. Dinner? Fajita chicken with the taco seasoned chicken leg quarters! I refuse to waste so we shall break all the rules and enjoy our chicken today! 😂 you can find my simple chicken salad recipe on the website along with my amazing mayo! How amazing is my mayo?
