First time meal prepping today. I used what I had. Practice run. This was quicker than I thought.
Meal #1 Teriyaki glazed salmon and frozen cubed sweet potato with green beans.
Meal #2 Shrimp with cauliflower rice and tomatillo, cilantro and lime skillet sauce with fresh corn.
Meal #3 Grilled chicken breast with cilantro rice and tomatillo, cilantro and lime skillet sauce with corn and green beans.
Corn is not a usual choice for me but it is what I had.

Ingredients:
1. 1 small yellow onion, diced
2. 2 cloves garlic, minced
3. 3 large kale leaves, stems removed and chopped
4. 5 crimini mushrooms, diced
5. 1 zucchini, diced
6. *Optional: 1/2 cup protein of choice, I used wild caught salmon, diced
7. 1 cup Parmesan cheese or vegan substitute i.e. Cashew cheese
8. 1 cup rolled oats
9. 1 cup choice of flour ( I used my gluten free brown rice flour mix)
10. 2 tsp baking powder
11. 1 tsp kosher salt
12. 3 eggs
13. 2 tbsp unsalted butter, room temp
14. 1/2 cup almond milk or milk of your choice
Preheat oven to 375 degrees and prepare a muffin tray greased with coconut oil. To make it easy and less prep work, I threw ingredients 1-6 into my food processor instead of chopping and dicing each ingredient. In a large bowl, mix the dry ingredients 7-11, and then pour in the veggie and protein mix into the dry mix. Add in the eggs, butter, and almond milk and mix well. Pour into muffin tray and bake for 25-30 mins. Will be pretty moist inside because of the cheese and zucchini as it has lots of water in the veggie.

Due to my marvellous gardening skills - AKA - leaving last years silverbeet spinach to self seed! I have an abundance of this delicious green. Eggs🍳 are nutrient powerhouses💪, a real superfood ⚡️,️ they are a versatile ingredient. I think that most cooks should learn a few methods of how to showcase eggs🍳. Having a repertoire of egg🍳 recipes is one of the best cooking skills to have.⁣⁣⁣

There are endless combos. They are versatile and also easy to cook. They can also be used for pancakes or cakes too but does not really count.⁣⁣⁣

They are also other eggs🍳 out there such as duck eggs🍳 which are more nutrient rich than hens.⁣⁣⁣

I try to rotate eggs🍳 every other or third day so that I do not create any potential food sensitivity. This keeps my immune system in check.⁣⁣⁣
