CREAMY VEGGIE SOUP
After a creamy, delicious, wholesome soup? I've got you...



Ingredients:
Garlic x 2 bulbs
Leek x 1/4
Carrots x 3
Cauliflower x 1/2
Green beans x 2 handfuls
Potato x 4 (medium)
Red lentils x 1 cup
Distilled water
Vegetable stock cubes x 2
Pepper sprinkle



Method:
Pre soak lentils in water. Rinse and strain. Dice garlic, leek and cut all veggies into chunks. Fry up garlic and leek with a little coconut oil. Add in carrots and continue to fry. Add in stock cubes and a little water. Add in all other veggies then cover with water. Bring to boil. Add in lentils. Let it simmer until veggies are cooked. Add in a sprinkle of pepper. Tastes even better the next day 😍😍😍

Change can be overwhelming. Whether it be related to clean eating, fitness or personal growth. It’s so comfortable; so safe, to stay where we are. To live life in auto pilot day in and day out. Sometimes the overall picture of our ‘final’ destination can be overwhelming and just too far from our current situation.
In my experience, the trick is simply to start. To break the larger goal into small, achievable steps. One change a day or one change a week.
If your goal is to eat better, simply start with replacing one or two meals with a healthier, whole food alternative. Give your taste buds, your routine + your ego time to adjust. And reward yourself for taking that step forward! Focusing on the incredibleness you have already achieved is a much stronger motivator than beating yourself up about the block of chocolate you ate last night! You’ve got this. You are worth it.

We had a fabulous brunch today. I was testing a recipe for Green Shakshuka made with chives and spinach and all sorts of goodies, topped with avo and tomatoes and feta...mmm, mmm. Served this Israeli salad on the side. I didn't make this salad. It's from the Whole Foods salad bar. I Love Whole Foods and the plethora of healthy ready made options. Israeli salad is very similar to Persian Shirazi salad which you can look up and find on O.H. blog. Hope you are having a good weekend huggers! FOOD PUNK// Today’s wholefood movement is often described as the 1970’s resuscitated on kale powder and kimchi. Please! In the 1970’s, cooking skills sucked. We were too busy lovebombing the world with geraniums. Forty years on, our culinary skills have been heightened and honed. So yes, there has been a re-awakening of wholefood ingredients but more importantly we see this awakening wedded to whoop-ass kitchen skills. This ain’t no hippie culture my friends. This is punk. Great swathes of perfectly sane people have turned their attention towards mindful practices, in search of a more socially responsible roast from capitalism. But taste is at the forefront of this movement. You’ll find we don’t just do sausies. We do slow pork, where piggies have been massaged with lavender, read bedtime stories and fed bottles of rooibos tea. Nor do we do slicepan. We do house-cultured sourdough from heritage grains harvested by moonlight. And we do not do instant coffee. We dry hump our monthly coffee subscription where the beans were raised on Bach and lightly washed with tears of joy. We are taking unrefined ingredients and celebrating them for their deeper intelligence, in contrast to society’s reliance on conveyor belts and chemicals. And we are doing it with unprecedented style and skill. Welcome to the new age rhythm of Funk – food punk. 3 pantry staples to make your healthy meals way more delicious//

1)TAHINI: While I love almond butter as much as the next gal, tahini is my jam! Tahini is a sesame seed paste that can be used in hummus, sauces and salad dressings or drizzled over roasted veggies. I also love using it in healthy treats and as a topping for oatmeal or chia pudding. It’s also great in smoothies! Tahini is also packed with minerals like calcium, magnesium and zinc!
2)VINEGARS: I always keep a few vinegars on hand for making homemade salad dressings and for brightening up a dish. Red wine vinegar, apple cider vinegar and brown rice vinegar are in my pantry right now! Apple cider vinegar is great for a little wellness shot while brown rice vinegar goes nicely with Asian inspired dishes. Red wine vinegar is delicious in salad dressings or drizzled into a soup.
3)SEA SALT: Ditch your table salt for a good quality sea salt! You’ll be replacing anti-caking agents and fillers with minerals and better flavor. Just a little pinch will amp up the flavor of your dish or elevate the sweetness of a chocolate chip cookie or energy ball. I like to keep a flaky sea salt on hand for sprinkling at the end of cooking and a basic sea salt for adding to a dish during the cooking process. .
