Bhakri, a rustic bread, born in the villages of India. It can be made many ways, this particular method was passed down for many generations in my family and originated in the small village of Lathi.
Sift whole wheat flour and add oil and keep mixing to form crumbles in the flour. Add water and form a tough dough. Portion them out and roll into circles. Make sure they are round if you want to get married 😂. I have the good fortune of having these clay discs that have been seasoned for decades and have probably churned out hundreds of bhakri. An alternate is to use cast iron, you want something that can hold heat very well to build that char on the bhakri. Be sure to place small holes or indentations so the bhakri does not puff up too much when cooking. Get a nice char on it and cook it thoroughly on both sides. This goes very well with any vegetable dish and can also be eaten on its own. Wash it down with some cold chaas.
