Now back in NC, I am reflecting back at my time spent with my sister @holistic17 and niece in WV! We had the greatest time together...from beautiful long hikes and other fun adventures to making some of the most delightfully delicious and delectable plant based dishes! Anyone that thinks you can’t eat amazing food and be healthy is unfortunately very mislead! Living this type of lifestyle doesn’t = eating salads for every meal. In fact, I would go so far as to say...I am eating more exploratory foods than ever before! I am constantly trying out new recipes and being blown away at how wowing food can really be! I admit, it is more fun and much easier when you have others around you with this common interest and chosen path...so thanks Kate, Nate @fayettenamzombie for the yum dinners we shared!
