Healthy Honey Cake Recipe (Medovik)
Irresistibly moist and secretly healthy honey cake with no added flour or sugar - try it to believe it. Plus it's easily made gluten-free… This recipe is so good, you're going to want to eat it again for breakfast the next morning!
For the sponge cake:
Yogurt - 150 ml
Skimmed milk powder - 5-6 tbsp
Oat bran - 4 tbsp
Wheat bran - 2 tbsp
Corn starch - 1 tbsp
For the cream:
3 egg yolks
Corn starch - 1 EL
Low-fat milk - 200 ml (50 ml + 150 ml)
Butter - 100 g
Honey ~10 g
1.Heat skimmed milk powder in a pan over low heat until it turns orange. Cook, stirring constantly so that nothing burns. It takes about 15 minutes or more. This is the most important part of cooking. The milk in the pan gets the taste of honey, so that the honey cake does not need honey, since there is already aroma of it.
2.Crack the eggs into a bowl, egg whites and egg yolks should be separate.
3.Mix egg yolks with yogurt, oat and wheat brans, corn starch, sweetener and baking powder.
4.Using an electric whisk beat the egg whites. It will take approximately 5-10
minutes. The mixture should be very thick.
5.Add it to the egg yolks mixture.
6.Bake in the preheated oven at 180°C for approx. 30 minutes, until a toothpick inserted into the comes out clean. Remove the cake from the oven and cool completely on a wire rack.
7.Cut the cake in several layers horizontally.
