1/2 package Trader Joe’s steamed lentils
One red onion
One celery stock
1 carrot or 20 baby carrots
1 tablespoon olive oil
28 ounces can diced tomatoes
1 cup red cooking wine, or something better!
2 teaspoons dried oregano
2 teaspoons find green salt
Half teaspoon ground black pepper
Chop onion into eight sections, add food processor.
Chop celery into four pieces, add food processor.
Add baby carrots or roughly chopped carrot to food processor. Pulse until everything is finally chopped (keep food processor out).
Heat oil over medium high heat
When oil is hot add chopped veggies and sauté 10 minutes or until onion is translucent, (don’t rush the step, if the carrots don’t start to get soft your Bolognese will be slightly crunchy like mine was).
While veggies are cooking cut package of trader Joe lentils in half, add 1/2 to the food processor save the other half for another recipe.
Purée lentils in food processor (keep food processor out)
Add diced tomatoes, salt and pepper, bring to a simmer and cook five more minutes
Add red wine, stir well.
Add sauce back to food processor and blend until smooth.
Put sauce back in pot, add puréed lentils, stir well, cook over low heat 15 minutes
Taste and adjust seasoning if needed
Serve over your favorite pasta or zoodles!
