Is coffee good for you?

Studies show that people who drink coffee regularly may have an 11% lower risk of developing type 2 diabetes than non-drinkers, thanks to ingredients in coffee that can affect levels of hormones involved in metabolism.

In a large study involving tens of thousands of people, researchers found that people who drank several cups a day—anywhere from two to four cups—actually had a lower risk of stroke. Heart experts say the benefits may come from coffee’s effect on the blood vessels; by keeping vessels flexible and healthy, it may reduce the risk of atherosclerosis, which can cause heart attacks.

Eggs were previously associated with heart disease risk as a result of their high cholesterol content. However, a solid body of research shows that for most people, cholesterol in food has a smaller effect on blood levels of total cholesterol and harmful LDL cholesterol than does the mix of fats in the diet.

Cheesy Cauliflower Breadsticks. Ingredients
4 cups riced cauliflower about 1 large head of cauliflower
4 eggs
2 cups mozzarella cheese I used a Tex Mex blend
3 tsp oregano
4 cloves garlic minced
salt and pepper to taste
1 cup mozzarella cheese, or more for topping
Instructions
Preheat oven to 425 F degrees. Prepare 2 pizza dishes or a large baking sheet with parchment paper.
Make sure your cauliflower is roughly chopped in florets. Add the florets to your food processor and pulse until cauliflower resembles rice.
Place the cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes. Let the cauliflower cool just until there's no more steam coming from it. Place the microwaved cauliflower in a large bowl and add the eggs, 2 cups of mozzarella, oregano, garlic, salt and pepper. Mix everything together.
Separate the mixture in two and place each half onto the prepared baking sheets and shape into either a pizza crust, or a rectangular shape for the breadsticks.
Bake the crust (no topping yet) for about 25 minutes or until nice and golden. Don't be afraid the crust is not soggy at all. Once golden, sprinkle with remaining mozzarella cheese and put back in the oven for another 5 minutes or until cheese has melted.

Brownie Batter Protein Pudding
Ingredients
1/2 cup (120 ml) unsweetened almond milk*
1 scoop (30 g) PlantFusion Cookies 'n' Crème protein powder
3 Tbsp (15 g) unsweetened cocoa powder
1 medium-size (100g) ripe banana, frozen**
handful of spinach (optional; good for some extra greenies)

Directions
Place all the ingredients into any standard blender in the order listed and blend until smooth and creamy. This pudding can be made in advance and stored in the fridge for extra thickness and creaminess. The longer it sits, the thicker it gets!
Notes
* To make smoothie nut free and allergen-free, use a rice milk instead of the almond milk.
** If you're not keen on bananas, you can replace it with 1/4 - 1/2 of a ripe avocado.
*** If you end up adding the spinach, you may need to add a little extra milk too. Start without it and then adjust to your preferences.
