Besides the many ramen samples I had at the @ramenexpousa this past weekend (more on that soon), I had my only bowl of Dallas ramen at @tenramen. 🍜
We grabbed a bowl of their Tonkotsu ramen and their Lobster Miso Ramen. The tonkotsu broth was light and not overpowering in any sense. The domanent flavors came largely from the toppings, a mix of pickled ginger and pickled mustard greens and a thick slab of chashu. The chashu didn't melt in my mouth but had a nice chew like a juice steak. The spicy miso wasn't anything to write home about, but it had nice bits of shredded crab in the bowl which you can't go wrong with.
I did like that this space was standing only. It minimized the amount of time people loitered. The computer tablet ordering system is a good idea, but there was no order to the chaotic ramen line. Once you put in your order you have to fight for your seat and hope you grab one before your bowl comes out.
This hip ramen space has room for improvement, but has a high ceiling of potential. 🍜🙏
