One of the most yummilicious things I sampled at this tradeshow for me was not the foie gras or the wagyu beef I tasted but these #dorayaki with durian puree filling! Fully automated from the making of the batter to the "yaki" of the fluffy pancakes, which were perfectly browned by the way , to the piping of the durian puree filling to finally sandwiching of the pancakes together. Chocolate and pastillage showpiece by one of the prize winners of this year's #asianpastrycup... a blend of anime and realistic elements in a matsuri theme with the young lady in a kimono and a kitsune mask while the guy donned a tengu costume. Amazing details and impeccable display of skills... who would have thought that it is all made of chocolate and sugar. Move aside Excalibur... there are many dehydrators out there in the market now but this fella from Japan is definitely out to impress. What struck me immediately was how the fruit not only retain much of their colour and flavour but also importantly their aroma! The dried strawberries were crisp and so so fragrant, with intensity magnified vis a vis the fresh ones. The newly unboxed set is up for grabs at the show as well at an attractive price. One of the main highlights for me personally at each FHA, is not just the Asian Pastry Cup but the individual and team culinary challenges where we get to admire the creations of young and budding chefs from around the region and be thoroughly inspired by them, some of whom may someday own restaurants and even michelin stars... .
