It sure ain't pretty, and was beyond messy, but it was literally the best sandwich I've ever made in my life: Grilled halloumi, fire roasted hatch chili, grilled peach, heirloom tomato, red onion, and mayo on a pretzel bun #nationaleatapeachday#eattherainbow
So if you watch my Instastories, you know I got a hold of a 12" long beet a while back and didn't know what fun thing I should do with it...so I asked y'all! I got some really creative ideas thrown at me, but this one from @myveganplate was the winner...I roasted the sucker whole then microplaned it lengthwise to create flat sheets of "pasta", then built it into a meyer lemon, goat cheese, and ricotta lasagna (and then proceeded to eat the entire thing in 10 minutes flat )
Wildly missing the colors and creativity of the restaurants in Canggu, Bali (and making @sunnymoe@helloimkim and @lisavalgreen excel at hand modeling). I can't believe I'll be back living there in less than a month!!!!

Balinese Jukut Urab with Coconut Kafir Lime Rice and Sambal (long beans, mustard greens, coconut, bean sprouts, kafir lime and a thousand ingredient Balinese spice paste). Basically a crazy magical flavor bomb I could eat every day forever and ever

Um yeah I made carrot dogs, threw them on pretzel buns, loaded them with nacho cheese, picked jalapeños, and shredded purple Brussels and cabbage and now have all four in my belly (recipe link in bio )
One of my favorite memories as a kid was walking up the driveway to our log cabin in the woods of Michigan eating blackberries straight off the bushes that lined the path. Eons later still every chance I get I shove blackberries in my mouth, but for some bizarre reason I've never cooked them...but today I threw em in a galette with blueberries and topped it with a coconut granola crumble and think I may have died and ascended to blackberry heaven
I found a chiogga beet literally the size of my head at the farmers market and immediately knew I had to bring it home and roast it whole so I could stick a giant knife in it for a photo (marinated post-roast with orange and lemon zest and juice, Thai chilis, shallots, chives, mint, sea salt, and olive oil and then warmed again and carved table side!) #turnipthebeet
Headed back out into the wild this weekend (Sequoia National Park!) and dreaming about this black lentil, heirloom bean, @beyondmeat burger, and Market vegetable chili I made at our Yosemite campground two weeks ago (recipe coming soon crew!)
