So if you watch my Instastories, you know I got a hold of a 12" long beet a while back and didn't know what fun thing I should do with it...so I asked y'all! I got some really creative ideas thrown at me, but this one from @myveganplate was the winner...I roasted the sucker whole then microplaned it lengthwise to create flat sheets of "pasta", then built it into a meyer lemon, goat cheese, and ricotta lasagna (and then proceeded to eat the entire thing in 10 minutes flat โ˜บ๏ธ๐Ÿท)

One of my favorite memories as a kid was walking up the driveway to our log cabin in the woods of Michigan eating blackberries straight off the bushes that lined the path. Eons later still every chance I get I shove blackberries in my mouth, but for some bizarre reason I've never cooked them...but today I threw em in a galette with blueberries and topped it with a coconut granola crumble and think I may have died and ascended to blackberry heaven ๐Ÿ™Œ๐Ÿป๐Ÿ˜‡โค๏ธ

I found a chiogga beet literally the size of my head at the farmers market and immediately knew I had to bring it home and roast it whole so I could stick a giant knife in it for a photo ๐Ÿค“๐Ÿ”ช (marinated post-roast with orange and lemon zest and juice, Thai chilis, shallots, chives, mint, sea salt, and olive oil and then warmed again and carved table side!) #turnipthebeet
