It’s Fry-Day 🍟 but all I can think about is this pancake pizza! To make, blend the following:
1/2 cup gluten free rolled oats
1 large egg (or flax egg)
1/2 scoop vegan chocolate protein powder
1/2 cup unsweetened almond milk
1 tbsp ground flax (optional - if using a flax egg, omit)
1/2 cup grated zucchini
1 tsp cinnamon

Cook the #pancake on medium heat in coconut oil for 3-4 mins on each side. Cut into 6-8 pieces, and add toppings of choice - I used #coconutyogurt, nut butter, fresh fruit, bee pollen, shredded coconut, and cacao nibs! πŸ’› #pancakes #dairyfree #dairyfreelife #brunchfood #breakfast #enjoyyoso

Tzatziki is such a simple, yet light dip that’s so versatile! You can dip veggies or pitas in it, or you can use it as a base in wraps and sandwiches! I used coconut yogurt in it, and it worked so well! .

I am loving the chocolate & peanut butter combination lately! I swirled the two frozen yogurt flavors so you get both tastes in every bite! I made this for @breakfastwithfowers , @aspoonfulofhealth_ and @oneslicemore #frozenyogurtparty !

CHOCOLATE YOGURT:
1/2 Cup @enjoyyoso Coconut Chocolate Yogurt, 1 tsp Maca Powder, 1 tsp Almond Butter, 1 Tblsp Cacao Powder, 1/4 Cup Unsweetened Coconut Milk. Combine everything.
PEANUT BUTTER YOGURT:
1/2 Cup @enjoyyoso Unsweetened Coconut Yogurt, 2 Tblsp Natural Peanut Butter, 1/4 Cup Unsweetened Coconut Milk, 1/4 tsp Cinnamon. Combine everything. Swirl the two flavors together and freeze for 1-2 hours. .

I like to start my day with a healthy breakfast to provide myself with the energy I need to think clearly and focus. When I know I am going to have a busy morning, I like to prep my breakfast the night before. My Lemon Coconut Overnight Oats, one of my newest recipes, is refined-sugar free, gluten free and dairy-free and is made with unsweetened coconut yogurt and gluten-free oats.
What are you having for breakfast tomorrow? Did it take you through to lunch or did you need a mid-morning snack? It's important we add enough fats and proteins to our breakfast to balance our blood sugar and keep us satiated. Are you a lemon and coconut fan?πŸ‹πŸ‹
