You'll definitely have to give these tostadas topped with coconut yogurt and fresh fruit a try at your next breakfast or brunch! 🍌❀️

To make them you'll need: corn tortillas, coconut yogurt, cinnamon, coconut oil, fresh mint, toasted coconut flakes, and fruit of your choice. We used persimmon, banana, and pomegranate. Steps: Brush/spray each tortilla with coconut oil and sprinkle with cinnamon. Place in preheated oven at 350F for about 10-15 minutes until crunchy. Remove from oven and let cool. Top with toppings as desired. Serve immediately. Have you guys tried sweet potato toast before? Let me tell you, they are amazing! πŸ’ƒI had so much fun making these little low-carb toast that I couldn't stop! πŸ˜†Which one would you choose for snack?🍠πŸ₯‘πŸ“πŸŒπŸ₯’πŸ…πŸ«

Sweet potato snack toasts (makes about 16 slices):
INGREDIENTS:
β€’ 1-2 sweet potatoes
β€’ olive oil
β€’ for salty toasts: avocado, vegan cream cheese like @daiyafoods, vegan kimchi, beets, tomatoes, radish, green onions
β€’ for sweet toasts: coconut yogurt like @enjoyyoso, peanut butter, berries, banana, vegan chocolate chunks
.
INSTRUCTIONS:
1. Preheat oven to 425 F and place a parchemin paper on a baking tray.
2. Cut the raw sweet potato into thin slices and rub a bit of olive oil on both sides. Places the slices on the baking tray.
3. Bake the sweet potato slices in the oven for about 30-40 mins depending on the thickness of the slices and turn them midway of the bake.
4. Once ready, let the slices cool. Use vegan cream cheese and avocado as spread for salty toasts and peanut butter and coconut yogurt as base for the sweet ones. Top with different salty and sweet things like veggies, berries etc. Enjoy as breakfast or snack! ✌️
