some weekends in this colder weather call for a comforting #oatmealbowl at my house πŸ₯£ SO comforting + delish! πŸ’• my body was realllly craving something warm + slightly sweet this morning, and i listened - so rather than reaching for veggies + eggs, i whipped up this beauty and enjoyed every last bite!

i cooked 1/2 c. old fashioned #oats in #coconut milk πŸ₯₯ + water (the only way to do it tbh), then threw in some shredded πŸ₯• + 🍎, raisins (a crime to some, i know πŸ™„), #cinnamon + allspice for #carrotcake vibezzz ✨ topped with toasted coconut, walnuts, a tiny sprinkle of @purely_elizabeth granola, a scoop of @enjoyyoso plain coconut yogurt + peanut butter πŸ₯œ.

It's getting cold outside, and all I wanna eat is soup! I mean, how good is a warm, nourishing bowl on a crisp fall day? πŸ‚Yeah, this weather got me all the soup feels! As I was looking for some ideas I came across @thebroccolilobby carrot pumpkin coconut soup 😍 just the ingredients alone sound dreamy, so I decided to whip up a pot and yup definitely hit the spot! πŸ˜‹ She has all sorts of soup recipes on her feed that's definitely worth checking out! πŸ’πŸΌβ€β™€οΈ

For the ingredients:
1 medium onion, diced
3 cloves garlic, minced
3 large carrots, chopped
2 ΒΌ cup pumpkin puree
1 tbsp ginger, freshly grated
ΒΌ tsp cumin
2 Β½ cup vegetable broth
1 can unsweetened coconut milk

Saute onions and garlic in some coconut oil. Transfer into a blender, add the remaining ingredients except the coconut milk and blend until well combined. Pour the soup into a large pot and set over medium heat while whisking in the coconut milk. Cook the soup, occasionally stirring until it's warm throughout. Taste and season with salt and pepper. When ready, garnish with some micro greens and @enjoyyoso coconut yogurt.

FLOURLESS APPLE CINNAMON PANCAKES πŸ₯žπŸŽπŸ΄on this beauuutiful friday morning!! who else is excited it’s the weekend⁉️

Ingredients:
1 & 1/4 cups @bobsredmill gluten-free rolled oats (pulse in food processor make β€œoat flour”)
1 egg
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 tsp ground cinnamon
1 tbsp raw honey
3/4C unsweetened almond milk
2 tablespoons @enjoyyoso coconut yogurt
1 honey crisp apple, sliced thin
🍎 🍏 🍎 🍏 🍎
Instructions:
In a food processor, pulse rolled oats until oats turned into flour consistency, then add to a large bowl. add baking powder, baking soda, salt and cinnamon to the bowl with the "oat" flour, stir to combine.
add the remaining pancake ingredients excluding the apple and whisk until combined. grease a non-stick skillet with coconut oil and set at medium heat. add pancake batter to the heated pan (1/4 cup per one cake). when bubbles start to form, then press in thinly sliced apple slices. turn heat down to medium-low, allow to cook for a couple of minutes, then flip the pancakes over and cook for another 1-2 minutes until batter is cooked through. serve pancakes immediately with toppings of choice! 🀀 makes 8 fluffy cakes πŸ™ŒπŸ»πŸ˜‹πŸ™ŒπŸ»πŸ˜‹ (for more pics) πŸ”SEARCH: Apple cinnamon pancakes on the blog! 😍#thenaturallynatalie #pancakes #dairyfree #enjoyyoso

I made the most satisfying snack / desert! Raspberry Yogurt Parfait 🀩⁣

Ingredients:⁣
β€’Frozen raspberries⁣
β€’liquid stevia⁣
β€’yogurt of choice (I used unsweetened coconut yogurt)⁣
β€’granola or toppings of choice⁣
Directions:⁣
Blend frozen raspberries alone into a dust, then mix the frozen raspberries with fridge temp coconut yogurt, mixing until well combined. The frozen raspberry dust should thicken the yogurt, almost like a soft serve ice cream! Sweeten with liquid stevia, I added 5 drops. (You could use honey or maple syrup instead but stevia doesn’t spike your blood sugar!⁣)
