Sunday plate of goodness! I will never tire of cooking crispy skin salmon every week. I can’t get enough. what’s everyone else having for dinner tonight? Who else lives solo and likes making colourful fun meals ! This plate includes: crispy skin salmon, avocado, tomato, soft boiled egg, kale, dill, roasted cinnamon pumpkin, lime, pan fried garlic beans with slivered almonds, purple carrot and a couple of gluten free dairy free dips-a spinach one and sweet potato and cashew dip. all my salad items were sourced freshly today from @lamanna_and_sons in South Yarra. One of my favourite places to get my produce from
TGIF!! Cold weather and weekends calls for a massive share plate of nachos! ... I happened to eat all this myself when I made them (over two sittings) but that’s nacho business !!
Sunday late lunch. I made a big batch of tabouli that will do me for tomorrow too. Hot tip- if you don’t want to use burghul or cracked wheat, you can substitute it for crushed almonds like I did here. I also cheated and bought a bbq chicken... lazy Sunday meal yet full of goodness-good fats, protein, veggies ♀️
Warm up in winter with this easy dinner from @jamieoliver 5 ingredient meal cookbook. This is the ‘epic rib eye steak’ and I added a few leafy Asian greens into the bean mix. Delish and perfect for a winter dinner party!
Breakfast / post workout meal gluten free seed bread (pan fried in coconut oil) topped with rocket, tuna, lemon, cherry tomatoes, whole egg mayo, olive oil, salt, pepper. hope all the Melbournites are making the most of the blue skies... even if it’s freezing outside.
Fresh. Clean. Simple. Salmon with watermelon+mint+feta salad. Perfect Sunday lunch that has a summer vibe to cheer my spirit up today hope you’re all having a nice day of rest. Be kind to one another. Xxoo.
Wanting to add a whole new citrus dimension to your salad !? ♀️ If so, then give grilled grapefruit a go! It’s delicious Drizzle with olive oil and freshly cracked pink salt and black pepper and put under a hot grill for about ten minutes (check it every so often so you don’t burn it but you can cook it as long as you like. The longer you go, the more caramelised it’ll become. Serve in a salad bowl along side your choice of protein and salad and add some mustard, hummus, pickled ginger etc. When you eat it, try and get a little bit of everything in the one mouthful. It’s a taste sensation ! (Handy tip: use a sharp knife to cut the segments of the grapefruit before you grill so it’s easier to eat when it’s cooked)
So my intentions were to just stick to the @lornajaneactive recipe of ‘Clean almond choc cookies’ that can be found on the movenourishbelieve.com website, but then my sweet tooth got the better of me!
I followed the recipe on there but I only had coconut syrup at home and not maple...so they weren’t as sweet as I would have liked...so then I went to town on them with @loving_earth chocolate that I melted down and sprinkled some coconut on them.
Yummy-not too naughty-snack!
Winter has well and truely come early here in Melbourne and that means one thing...yummy home cooked comfort food, like this sweet potato and potato bake! you may notice over the Aussie winter I’ll do more re-posts during the week and that’s because all the natural light is gone before I am home from work so I don’t get to do any mid-week cooking shots! So the weekends will be my only natural light time for cook ups and photos I may tackle a Donna Hay recipe this weekend !
Winter may be on its way but it doesn’t mean we can’t eat like it’s sunny summer! Burgers are always a good idea Homemade beef mince patty, cheddar cheese, pickled radish, tomato, lettuce, BBQ sauce and American mustard.
Was craving something sweet on this gorgeous Autumn ANZAC day afternoon after a lovely long walk with a good friend. I popped into @finerfruit fresh produce place in South Yarra and found amazing fresh figs so came straight home and created this guilt free/gluten free/dairy free/refined sugar free snack. Caramelised figs done in coconut syrup with a dash of lemon juice, along with fresh fig slices, coconut yogurt, goji berries, cinnamon, sunflower seeds and pepitas. The nutty flavour of the caramelised figs was just Devine ! A little experiment that well and I’ll definitely repeat I also love how the colours in this dish reflect the changing colours of the falling leaves in the streets of Melbourne right now
Being away in South Korea for two weeks in a little studio room without kitchen facility’s = me eating out for 14 days straight!! Don’t get me wrong, I had a fantastic trip! But my poor gut health by the end of the two weeks has just been all stuffed up. So I have dreamt of this moment for the last week, and I didn’t disappoint myself. Giant tasty nourishing rainbow bowl ! Probably one of my favourite bowl combinations yet. Here is the large list of what I put in it: baby spinach leaves and rocket (massage with apple cider vinegar and olive oil), crispy skin grilled salmon, fresh lemon and lime sliced thinly, cherry tomatoes, grated carrot, mushroom grilled with cumin and olive oil, roasted pumpkin with BBQ spices, sugar snap peas, toasted pine nuts, basil pesto, hummus, mango chutney, sunflower seeds, pumpkin seeds, chia seeds, goji berries, ‘pixilated’ avocado ...
