Little yeasted #buckwheat #blinis for brunch at the beach - ‘cause that’s how we self-cater ☺️: pickled shallots, herring and yoghurt-dill cucumber, boiled egg and natural yoghurt instead of cream cheese. I mixed up the dry ingredients for the blinis before we left home, and packed some pickled fish, kraut and the last of a punnet of dill (#projectclearthepantry - plus, this stuff - with fresh eggs, lettuce and bread - is great to make up any number of light meals). An easy mix of the batter with the wet ingredients yesterday, overnight rest in the fridge, and a little light slicing and frying in the morning. Some very dear folk were kind enough to bring me a massive bag of green olives, and I'm very excited to see how they turn out. I've only ever preserved ripe (black) olives before, so this is my first turn at the unripe version. Usually preserved with lye (not an easy get in country Australia...), I'm trying these in a simple brine, with plenty of fingers crossed (recipe @huntgathercook). Testing, testing, #tangzhong: #smokedcheddar, sweetcorn and chipotle #brioche scrolls. I am a devotee of @breadin5's brioche dough, finding it endlessly customisable, reliable - and forgiving. But though the unbaked dough is a robust keeper - once baked, it is best enjoyed (and enjoyed it will be!) on the day. In the unlikely event that one might have any of a batch left over, I was wondering whether the fabled tang zhong method would extend the bakes' lifespan - and how this process would co-operate with the carefully-calibrated #breadin5 recipe. Tang zhong dough requires you to cook a specified percentage of your ingredients, before incorporating them with the remainder, and then proceeding as normal (credit to Yvonne Chen’s “Bread Doctor”). #breadgeeks - I'm here to tell you that the combination works a treat! These craggy #laminated scrolls cuddled a tender heart, and stayed soft for about 5 days. Five happy, carby days ☺️🥖 #cheesybread

Gettin' steamy up in here: steamed enoki and shimeji mushroom #chawanmushi. Topped with those same mushrooms - but #deepfried. A little while ago, I used up some dried shiitake #mushrooms (#projectclearthepantry + #dryfriedgreenbeans) - but couldn't bear to waste the fragrant 'shroomy stock that was left behind from their reconstitution. So that was frozen. And then I found myself with a couple of punnets of #leftover enoki and shimeji mushrooms (#leftover from #chicken #marsala)... 🤔 What else to do, but make chawanmushi? A silky steamed custard, using just 3 backyard chook eggs and the umami-rich shiitake stock. With half the mushrooms steamed in the custard, and the other half deep fried in #togarashi-spiced rice flour. Served sprinkled with black #charcoalsalt, and a little #nori #seaweed. So elegant. Am I alone in this? I love #pickledfish - though I know my predilection is (literally) sniffed at by many. During our recent move, I discovered that I have an oversize collection of jars of pickled herring, taking up nearly an entire shelf of the fridge... So, in the interests of #projectclearthepantry, I've started digging into them in earnest. Here, a silky fillet is draped over a slice of dark and seedy beetroot loaf, a #schmear of #horseradish #kefir - #creamcheese, and some thin rounds of rosy homegrown shallots. Cradling a poached egg from my MIL's chooks, and a drizzle of dill oil. A final #saltbae sprinkling of black charcoal salt, and it’s ready to go. The sourness of the pickle brine works beautifully to bring out the sweetness in the dusky beetroot. Skandeeelicious! [#bread recipe adapted from @nigellalawson’s “Lazy Loaf”.]

#tastetest: It’s the cook's treat, tasting the first warm bite of a freshly baked loaf. This is a dense, grainy #kefir and #beetroot loaf - an adaptation of @nigellalawson’s incredibly easy and rewarding "Lazy Loaf": to her recipe, I added a cup of blitzed roasted #homegrown beetroot, and replaced the called-for milk with some of my #homemade #goatmilk kefir.The beetroot is not as assertive as I’d hoped it would be - though I I do like what flavour and texture it does add. For those not familiar with this ridiculously easy recipe: you mix up some good, seedy (and fruity, if you like) muesli, wholemeal bread flour and other standard bread ingredients already in your pantry and fridge, mix to "thick porridge" consistency, and then place into a cold oven. Yes, a cold oven. Bake at very low heat for 45 minutes, then increase the heat and bake for another 50 minutes or so. I usually then remove the loaf from the tin and return it to the oven for a bit longer - to make sure that it's cooked through and crusty all the way around. I like this recipe because it's very close to my beloved Cape Seed Loaf, and those brooding Nordic loaves. Bonus: it keeps very well too! And I love my first slice adorned with only (plentiful ☺️) butter, and a sprinkling of flaky salt.
