Ridiculously Easy to make, homemade almond milk ftw 💃🏻💃🏻😘

1 Cup Almonds
2 Cups Water + 1.5 Cups for soaking
1/8 tsp salt
Honey (optional)

Place the almonds in a bowl and completely cover with water. Let soak overnight on the counter (or you can soak them in the fridge for 2 days!). Drain and thoroughly rinse the almonds, discarding soaking liquid. Combine 2 cups of water, rinsed almonds, salt and honey if desired. Pulse the blender to break up the almonds and then blend on high for about 2 minutes (scrape down sides and blend again if needed). Line a fine-mesh strainer with cheesecloth and place over a large container (I used a 5 cup measuring cup). Press all the almonds milk from the almond meal by squeezing and pressing with clean hands. You should get about 2 cups but, I have noticed if I squeeze the cheesecloth firmly and then place a pot over the almond meal and then move everything to the fridge I get about 2.5 cups letting gravity do its work for about 3 hours while I do laundry and errands.

Vegan Almond Milk Cardamom Rice Pudding with Rose Water and Pistachios is quite possibly my new FAVORITE dessert….also as a side note I finally started dedicating time to the new blog site peeps! Super excited to share it with you guys especially considering that the blog finally hit a year! Recipe is below and I will continue to include the recipe in my captions until new site is up and running ❤️❤️

2 Cups Almond Milk
1 Tsp of Vanilla Extract (or 1 vanilla bean scraped)
8 lightly crushed cardamom pods
1 Tbsp Honey
1.5 Tbsp Rose Water
2/3 Cup long grain rice (I used basmati since I always have on hand)
2 Tbsp Brown Sugar
¼ Cup Chopped Pistachios + more for garnish

In a large saucepan add the almond milk, vanilla extract, cardamom pods, honey and rose water. Bring to a gentle boil and then remove from heat and set aside for 25-30 mins. This will let the cardamom “steep” and fortify the almond milk. Bring almond milk mixture to a boil and add the rice – constantly stirring. After 3 mins. Remove from heat and cover immediately. Let pot sit covered, off heat for 20 minutes or until majority of the liquid has been absorbed by rice. Stir in brown sugar and pistachios. Top with more pistachios and DEVOUR

Sichuan Spicy Chili Garlic Sauce is extremely versatile and compliments the shrimp amazingly. Typically the shrimp would be tossed in flour then deep friend then tossed in the sauce but this stir-fry version is a healthier quicker version soooo, if you have less than 15 minutes to come up with a seriously yummers, easy, flavor packed dish - then this is the recipe for you!

Sichuan Spicy Chili Garlic Sauce, in a word, is AMAZING. The sauce itself, to me, isn’t as spicy as you would assume it to be (it’s seriously packed with chili peppers – like seriously), but, the flavor and aromatics it adds is simply AMAZINGGGG. This is a staple and must have for me because of how super easy it is to make PLUS how complex and adaptable/flexible/versatile the sauce itself is. It can transform anything into a scrumptious dinner, seriously, shrimp, chicken, tofu, leftovers all you gotta do is toss it in some Sichuan Spicy Chili Garlic Sauce and BAMM dinner is served

Hey guys! So, I know I don’t normally post personal stuff on either my blog or even my personal account but, I have been getting way behind responding to messages and comment plus, let’s be real, normally I’m verbally throwing up about how much I love you guys and my dog all over social media…… I just wanted to take a moment to thank all of you for all the love and the support you’ve been giving me. The blog almost hit a year and I’m currently in the process of rebranding….mainly just revamping the blog site and changing the domain to something a bit easier to find but, don’t worry I’m still keeping the name. I CAN’T BELIEVE ITS GROWN THIS MUCH, through all the discouragement to actually start it, it’s amazing…honestly..amazing…to see yourself grow and accomplish what others said you couldn’t, all on your own…and people wonder why I’m always encouraging others to not give up on anything that they should at least attempt it……April in general is an emotional month for me because my father was born and died in April. We had a complicated relationship but, at the end of the day and I can’t fully articulate what he meant to me. And how much he’s impacted by life for both the better and worse. I’ve been on my own since I was 16, I never really knew family after that age and I have the tendency of pushing people away but, it made me realize that you chose people who chose you. Again, I just wanted let you guys knows that I still love you all and I appreciate all the support you guys have given me through my blogging journey…..I promise I will be responding to all comments and messages over this weekend while working on blog content ❤️

I honestly don't know what to say about this tart other than it is simply frikken DELICIOUS. Ok ok so, I'm a bit bias, anything with ricotta and goat cheese really I'm on board to eat in HUGE quantities like seriously, pass me a shovel I can’t eat it quick enough! I've made this tart about 500 million times so, I guess saying that I love it is an understatement. This quick yet impressive recipe is a staple for me and once you try it you'll see why!

The ricotta and goat cheese filling is creamy with nice caramelization, the asparagus and tons of fresh herbs adds an amazing crispy element to balance the cheese and if you're feeling extra fancy you can also top with the zest from half a lemon (I typically don't make it that far since I'm already burning my mouth trying to eat it straight outta the oven) .
