Anthony Bourdain is the reason I got into the cooking. From Kitchen Confidential to Parts Unknown, I devoured his work and wanted to *be* him from the intellectual curiosity to the radical politics. It's funny how significantly someone you've never met can impact your life, but he made me realise that I could combine my love of food, travel, social justice, dialogue, and storytelling into a career. He didn't just contribute to the culinary field; he made a quantum leap, changing the entire landscape and with it, created a space where my life could have purpose. Maybe it's my own relationship with mental illness or the fact that meeting him was on my bucket list, but this one really fucked me up. If you think your friends/loved ones are struggling, please please reach out and posit that you actually want to know if they're not OK/encourage them to be honest. Maybe you can't do anything, but that's never an excuse not to try. I have love for all of you and got your backs.

It may not seem like it, but menu design is actually one of the hardest parts of running a restaurant. There's loads of dishes that seem awesome in your head and turn out to be disasters in practice. Sometimes you spend an entire week on one element. Others, things just click though and you nail the dish on your first attempt. The most rewarding part is doing a tasting with the whole team (really, the only time I'm OK sharing my food), explaining the concept and technical features, and getting their feedback to dial it in for a final iteration (fun fact: the dish has already changed between the time this video was taken and now).

I've been keeping this project a bit close to the chest lately because i don't like advertising or talking about things that aren't 100% certain. The reason my @eat.khorak page has been relatively quiet is that I've been hired by @seraibistroislamabad as their head chef. This is genuinely a dream job, but it's also mildly terrifying because I've gone from being a self employed private caterer to being COO of an entire restaurant. But I figured if Trump can be president, why not?

I'm happy to announce that as of May 7th, we'll be rolling out my experimental menu available to the public for the next fortnight, which will then shape the final concept - launching Islamabad's first actual tapas bar!
.
I'd like to show some instrumental people a special bit of love:
@brokedinner - You've been my inspiration, my mentor, and most recently, my friend. I learned how to plate by studying your dishes, and the fact that you've been so willing to engage with me and help me develop (despite being a big shot baller with 10k supporters) has been the single biggest factor in me being in this position now.

@tallbaker_830 - You introduced me to @brokedinner and our discussions on food and specifically its cultural and anthropological value have directly shaped my personal style and philosophy.

@hizbarhayauddin - The worst food taster but the best support system ever. You're the Emile to my Remy, and never hesitate to tell me when my sauces are a little heavy.

@nokhezusama - Your patience and willingness to look through hundreds of photos and help me understand what makes a good shot is one of the main reasons my page has been successful.

@shanzm - For introducing me to Qamar Zaman, the challenge of veg recipes, and enduring countless photos of meat and weighing in on my plating style.

@animhoti - For *always* being willing to explore a new food option and further expand my flavour bank, regardless of how broke we were at the time. The Duck is where it started and I can't imagine a better companion to have begun this journey with.

So yesterday marked a year since my first track cycling race, and in all honesty, it hasn't been a pleasant one. Usually my nostalgia posts are celebratory and emphasize the feel good moments, but 2017-18 has genuinely been the hardest year of my life. I suffered a traumatic brain injury, the results of which I'm still struggling with. I broke bones. I self-destructed and ruined a friendship to someone extremely important to me. I failed. I started having panic attacks. I had to give up competitive rugby. I spent some time homeless. I got dropped from the team for the Asian cycling champs. I had mental and emotional breakdowns. In short, I hit rock bottom.
.
But just because it was hard, doesn't mean it was bad. I discovered my passion not just for cycling but for training - pursuing excellence purely for its own sake. I learned to stop competing against others and focus on beating the person I was yesterday. I finally engaged with my mental health issues and started getting help. I forged some of the most meaningful relationships of my life. I started developing the work ethic I wish I had in college. I fell in love. I broke national records. I learned to push myself to the edge, even over it sometimes, and claw my way back. I became ok with failure. I finally started pursuing my culinary dreams. I accepted my imperfections. I aimed for the Olympics. The year may have broken me, but that gave me a chance to piece myself back together into someone that resembles the person I want to be.
.
We shit on social media rewiring our pleasure centers to release neurotransmitters whenever we see notification icons. Maybe it's true, but I take every single post, comment, reply, and reaction to heart, and revisit them over and over again. When I've been burying myself in a training effort or trying to pull myself back together during a panic attack, I latch onto the positivity you guys share (sometimes it's as simple as a "you've got this, champ") and it becomes a talisman. You're my ohana.
.
So I wanted to show some appreciation for the sport that keeps putting me flat on my ass, and the family that keeps picking me back up. Thank you so much. I love you.

One of the skills I'm most proud of is my ability to find any doggo's "spot". Like that one area you scratch and they fall over and become your BFF. This was a tricky one initially, because it's a breed I've never seen before, but we got there eventually. I think he's bilingual too, because he moo'd at me.

When camps for the Asian Champs were announced a month ago, I spoke with the secretary, and two vice-presidents of Pakistan Cycling, requesting that I be allowed to stay and train in Islamabad during the week (the velodrome is 5 hours away). I had various professional commitments including an immigration case and business-related meetings. I explained my coach's training and nutrition plan, outlined targets, offered to attend the camps every weekend and whenever I could during the week, and committed to paying my own travel costs. All three of them agreed, unequivocally. I know this because I called each of them separately and asked them to repeat it in their own words. I attended camps and clocked in times 0.4-0.6” faster than the other guy trying out for Man 1. My best performance was 25”, while his was 25.9” (for reference, the difference between 1st and 12th place in the f200 was 0.37” so 0.9” is huge). A week before we were due to depart, an insider friend told me that I had been removed from the squad (no official correspondence thus far). When I called the higher-ups, they claimed my competitor had been putting in better times than me. I asked for the timings, they said there were no records of those attempts. I offered to drive to the velodrome that day and put in a better time, they said that timings weren’t the only consideration and that camp attendance mattered. I reminded them of our agreement – one of them admitted that he lied and taunted me saying that there was nothing I could do about it. The gist is the guy they picked is from the same province as the president + secretary, and it looks good for them if they’ve got provincial representation on the national team. The other team members were from Army and utilities departments, so I was expendable.
Of course, what good is my word, when you’ve got numbers. I drove to the track this weekend, and without warming up (after a 5 hour drive), unshaven legs, no aero wheels, and on a windy AF outdoor track, tied my own PB. Grab a stopwatch, time it for yourself, and tell me if it’s faster than 26 seconds (what team PK posted at the champs). #wymtm #FromWhereIRide

This is one of my favourite things about national teams and sports in general. Last month this guy and I were literally butting heads for bronze in the sprint at Nats and now we're working on our team sprint chemistry for Asian Champs next month (nothing like am ogre breathing down your neck to make you ride faster). Off the bike slash when he's not trying to rip your legs off during a race, "Dungar" (Ox) is one of the sweetest and most humble guys ever.
