Gluten-free Vegan Baked burritos If you want this meal to taste like the real deal... get the corn flour tortillas (not the wheat wraps). It makes all the difference!! You’ll need:
-Corn flour soft tortillas, white rice, refried beans (see recipe below), lime, cilantro, “cheese”, corn: whatever kind you have: frozen, canned, fresh whatever ♀️ For the refried bean sauce:
- canned Pinto beans
- cumin powder
- onion & garlic (the real deal or the powder whatever ♀️ Rince your canned beans. - In a small saucepan, empty the canned beans and mash roughly 3/4 of the content; with a fork, a potato masher or whatever...♀️♀️
- add water so the mixture doesn’t get to dry but that you can still spread it smoothly
Assembling the whole thing...
Spread refriend beans onto the tortillas. Add corn, cilantro and lime juice. Roll it up and place in an oven safe baking dish at 350F.
