Coconut-Curry veggies -1 medium onion sliced -2 garlic clove minced -2 large carrots chopped - 6 small potatoes chopped -1 can of full fat coconut milk - 1/2 cup raw cashews -2 tbsp curry powder - salt & pepper to taste
1- steam veggies
2- on medium-high heat, cook onions & garlic with a little bit of oil in medium size saucepan
3- when onion is soft, add curry powder
4- stir a little than add the coconut milk ans the cashews
5- cook for about 2 minutes than add steamed veggies

There’s a saying: “You are what you eat” and nowadays, most of the food we eat is over- processed and cooked. There’s an idea that eating “alive” food ( and I’m not talking about those crazy videos we’ve all seen of people enjoying slurping up a live octopus from their soup; but “alive” as in, not damaged by cooking) will make you feel alive. (Don’t be rolling your eyes now 🙄 👀 👀) Think about it. When cooked, there’s a great loss of nutrients.

Baked potatoes with nacho cheese sauce, parmesan and green onions.... it’s vegan (just saying 😏) 🌱 🌱 🌱
Have you ever felt like finishing the nacho cheese container...?! Well this batch you can finish, lick the saucepan, the spoon and your plate and you’ll actually feel good about yourself after. *** you can use this cheese sauce for Mac&Cheese, over baked burritos or with nachos*** Nacho Cheese Sauce -2/3 cup raw cashews( boiled for 10 minutes). -1 1/3 cup water. -2 tbsp nutritional yeast. - 2 tbsp arrowroot powder - 2 tbsp apple cider vinegar - 3 baby carrots or 1 piece of red bell pepper (for colour - 2 tsp smoked paprika - 1 tsp salt, or more to taste - black pepper, cayenne pepper to taste - Put everything in a high speed blender and blend until smooth. - Pour the mixture in a small saucepan, stirring constantly on medium-high until desired texture.

Baked Anjou Pears🍐🥥 Because it’s super comforting, warm and it makes your place smell delicious 😍

Preheat oven at 400F.

Anjou pears don’t particularly taste good raw but when they are cooked, they taste like the canned version of store bought pears: minus the tin can taste...🙄 -5 Anjou pears, peeled, sliced in half an cored. -1 can of coconut milk (full fat or light)
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves -place pears core down
-pour the milk over
-season
-heat until tender ***you can easily reheat leftovers in a small sauce pan 😊

What a month off refined sugar, gluten, alcohol and caffeine will do to you?! It will make sugar taste too sweet. Make gluten feel weird on the roof of your mouth. Makes you realize how alcohol is taking too much space in social events. Makes just the smell of coffee reminds you of how overly hyped you can get from this high.... and it makes you say stuff like: “If you feel the need for coffee; you probably need sleep or relaxation; not a 2 hrs workout. “🤦🏽‍♀️🙃

Gluten-free Vegan Baked burritos 🌯😬🌱 If you want this meal to taste like the real deal... get the corn flour tortillas (not the wheat wraps). It makes all the difference!! You’ll need:
-Corn flour soft tortillas, white rice, refried beans (see recipe below), lime, cilantro, “cheese”, corn: whatever kind you have: frozen, canned, fresh whatever 🤷🏽‍♀️ For the refried bean sauce:
- canned Pinto beans
- cumin powder
- salt
- onion & garlic (the real deal or the powder whatever 🤷🏽‍♀️ Rince your canned beans. - In a small saucepan, empty the canned beans and mash roughly 3/4 of the content; with a fork, a potato masher or whatever...🤷🏽‍♀️🤦🏽‍♀️
- add water so the mixture doesn’t get to dry but that you can still spread it smoothly 😏

Assembling the whole thing...
Spread refriend beans onto the tortillas. Add corn, cilantro and lime juice. Roll it up and place in an oven safe baking dish at 350F.
