I always find it *essential* to have quick lunch options for when I’m in revision mode. I’ve never been a sandwich gal, unfortunately, so grain-based salads are my staple. Pulled the last of my Yorkshire forced rhubarb out of the freezer, cooked it down into a compote and swirled that into a buttery cake batter. A sprinkle of oat & almond crumb plus a yoghurt glaze on top to finish πŸ‘ŒπŸΌ Using this cake to get through my last week of lectures/coursework before exams begin πŸ˜¬πŸ°πŸ“š

CHEESY CABBAGE CROSTINI // I’m all about the appetisers when it comes to holidays - mini food just tastes better somehow?! I’ve done some cute crostini here by slow cooking cabbage in olive oil then mixing with Heinz #SeriouslyGoodMayo, garlic and thyme, topping with πŸ§€ and grilling those lil guys until goldenπŸ₯– (recipe in my stories). BLUEBERRY CHEESECAKE MUFFINS // well apparently it’s going to snow AGAIN today. Come on Spring I’m so ready for you 😭🌷. I get a bit fed up of eating winter fruit so I always have some #essentialWaitrose frozen blueberries on hand for putting into pancakes/on porridge/in muffins in the colder months. These muffins are taken up a notch by piping a blob of cheesecake mixture into the centre pre-bake 😍. You can find the recipe on @waitrose website, link in my profile. SWEET POTATO NACHOS // When it comes down to the last couple weeks of term I’m usually maintaining a maximum stress level thanks to coursework deadlines/presentations/meetings which ALWAYS seem to all come at once πŸ€¦πŸΌβ€β™€οΈ. It’s at these times that I really just need easy dinners - hello pasta pesto with broccoli - but my NEW thing is nachos! Roast some veg (my fave is 🍠), cook a can of beans with spices, layer onto tortilla chips with cheese (all #essentialWaitrose ingredients πŸ™ŒπŸΌ) & bake until melty. Oh and the leftovers reheat perfectly too 🌝. YORKSHIRE PUDDING PIZZA πŸ•// made this for my birthday dinner and promised to write up the recipe for those who asked so here it is - recipe link in my profile! If you don’t already know what a Yorkshire pud is, it’s basically crepe batter baked into puffy little cups usually using a muffin tin or something similar. They’re akin to popovers (for anyone in the US) or Dutch baby pancakes πŸ₯ž. Usually they’re an *essential* part of a Sunday roast but here I’ve gone and filled a giant one with pizza toppings because when did cheese ever NOT improve something. Bonus cos it’s actually a lot quicker than making real pizza so you should maaaaybe give it a go πŸ˜‰πŸ€·πŸΌβ€β™€οΈ
