Well, we woke up to a wet and overcast day! It was very tempting to stay tucked up in bed But, when you're a runner you remind yourself 'whatever the weather' right? Mostly!

Recipe:- In a bowl, combine
1.50 c Oats
0.50 c pumpkins seeds
0.50 c chopped almonds
2 tbsp chia seeds
2 tbsp coconut flakes (optional)
.25 c dried apricots
.25 c cranberries
In a processor, blend into a smooth, creamy paste
1 c pitted dates
.25 c maple syrup
(Pinch of salt optional)
Combine the above ingredients and press into whatever shape you choose!
I dry roasted the oats, pumpkin seeds, almonds chia seeds for aporox 10 minutes for that slightly roasted flavour but that is also optional.
Today while out walking, I found this gorgeous vegetarian cafe tucked away in Finsbury Park. I enjoyed a much needed coffee and just couldn't resist this lemon tart.
