When I bake banana bread, I lose all control :) Just knowing that a loaf is sitting on the kitchen counter will make me come back for just ONE MORE slice all.. day.. long. Sunday night is the time when I try to make up for all of the vegetables that I didn’t eat Thursday night though Saturday. Roasted cauliflower is always a favorite - especially with lots of lemon zest(!), fresh herbs, and sea salt. So simple, so good! What’s your favorite way to zest up cauliflower? 💛🍋

If you’ve been following for long you know that I love soup. Actually, that’s an understatement. I ADORE soup. I love making it, I love eating it, and I love storing the leftovers so that I can enjoy my soup again and again. I turn to soup when I’m stressed because I find it meditative to cook. I turn to it when I’m snowed in because I often have a stash stored away in my freezer. And I turn to it when I’m in need of a bit of a healthy reset after a vacation because it just makes me feel good inside. If you love lemons as much as I do, try this tangy roasted Meyer lemon hummus! 🍋💛🍋 Instead of just squeezing in lemon juice, the whole lemon gets pureed to create an extra punchy flavor. The @Kitchenaidusa 7 Cup Food Processor is perfect for the job - it’s a convenient, easy-to-use, medium-sized food processor that’s so handy for everyday dips and sauces. Clean-up and storage is quick, too, which makes life that much easier!

Roasted Meyer Lemon Hummus:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 meyer lemon, thinly sliced
1 can chickpeas, drained and rinsed
3 tablespoons tahini
1/4 cup olive oil, more for drizzling
1/4 cup water
1 garlic clove
1/2 teaspoon sea salt, more for sprinkling
fresh lemon juice, optional
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preheat the oven to 425°F and line a baking sheet with parchment paper. Place the lemon slices and drizzle with olive oil and pinches of salt. Roast until golden brown around the edges. In the 7 Cup Food Processor, puree the chickpeas, lemon slices, tahini, olive oil, water, garlic, and sea salt until smooth. Season to taste, adding a squeeze of fresh lemon juice, if desired.
