I can’t cake my eyes off of you 🍰💜 - There’s nothing I enjoy more than watching a character come to life as I’m decorating a treat. Just like magic, a few simple ingredients can be transformed into any adorable animal my heart desires, and it’s extra awesome when I can make them a little healthier as well without refined sugar, and using fruit and veggie powders to add color (because I’m def. an every day dessert kind of person 🙌🏻😄). This colorful raw cake was inspired by Icelandic brand Tulipop @tulipopworld , and their wonderful world of lovable, unique creatures. I started with a walnut crust and vanilla cashew base, and flavored each slice differently depending on the character. Fred is the sweet monster (w horns), and I used black goji berry powder for his deep 💜 shade, and colored white chocolate for his features and ghosts. Gloomy - the adventure loving mushroom girl was colored with a mixture of pink pitaya and blue spirulina, and decorated with more white chocolate. Miss Maddy (prob. my favorite of all) was colored with blue spirulina. Maddy loves sweets and everything pink, so I made her slice a bit of a mashup by adding a cocoa tinted 🍦 cone to the bottom, and the all pink slice goes with her as well. I decorated it with colored white chocolate fruit, buttercream, and frosted 🍓. The galaxy slice is for Gloomy who loves to experiment with magic, and is fascinated by the stars and night sky. I swirled the colors I used for all of the other slices together to create the base and then topped it off with ✨ sprinkles, buttercream, and chocolate planets. Honey, 🐝 mine 🍯💕 - Happy Valentine’s Day 💌!! If you caught my stories recently of the honey filled package @bumbleberryfarms so kindly sent to me, you may have seen some of the delicious items I used to make this 🍦. I was super excited to try out their honey creams, which reminded me of one of my favorite ice cream toppings, caramel, so I thought it would be yummy to layer the Sticky Buns cinnamon honey cream into a big batch of homemade honey cinnamon cashew ice cream sweetened with Bumbleberry Farms pure honey 😋. It’s probably the coziest 🍦 I’ve ever tasted - warm, slightly spicy, and ohh so good (I’m kind of a honey and cinnamon addict 😄, so this one is right up my alley). You can find the recipe below if you’d like to try it too. To make those ⠀ bee-utiful 🐝 scoops I added wafer paper wings, sprinkle cheeks, 💕and antennae, and 🍫 for the stripes and faces. I hope today is wonderful no matter how you celebrate and who you celebrate with (fur babies can be valentines too 😄) 😘. ⠀ ⠀ Honey Cinnamon 🍦: serves 6-8⠀ ⠀ Ingredients:⠀ 2 sticks cinnamon ⠀ 2 14 oz cans full fat coconut milk⠀ 1 cup soaked cashews*⠀ 1 teaspoon pure vanilla extract ⠀ 1 teaspoon ground cinnamon⠀ 1/4 teaspoon sea salt ⠀ 3 tablespoons honey⠀ 1/2 teaspoon ground turmeric (optional, for color)⠀ *to soak the cashews, place 1 cup of raw cashews in 2 cups of water with 1/4 tablespoon Celtic or Himalayan salt. AvocadOOooOOOo 🥑 - There’s nothing like freshly baked 🍕 to brighten up a -7 degree day 😄, but what about pizza topped with avocado?! 🙌🏻?! I just love using 🥑 in both my sweet and savory dishes (it freezes and blends into smoothies and 🍦 for a crazy creamy texture 😋), so when @goodfoods reached out to collaborate with their Avocado Mash I couldn’t wait (I ate one as soon as it arrived 😆)!! The Avocado Mash is delicious - like a ready to go guac, but you could also v easily customize it to your liking too. It’s just avocados, 🍋 juice, sea salt, and black pepper. There’s no preservatives, artificial ingredients or added sugar, and they come in individually portioned containers which makes it perfect for packing or keeping yourself from eating ALL of them 🙃. I’ve made avo toast countless times, so I wanted to try something a bit diff, and thought why not make mini veggie pizzas and use the Avocado Mash as my base for a quick and yummy lunch. I made a really simple cauliflower crust, then spread on the Avocado Mash, and turned them into my favorite 💚 aliens with a little mozzarella, olives, green pepper, and spinach. Piglet: “How do you spell love?” Pooh: “You don’t spell love you feel it” ❤️ - 3 weeks ago today my grandma lost her battle with cancer, and although my heart is heavy with sadness I am so thankful that she is no longer in pain. My grandma was a strong woman. She lost her own mom when she was very young, and even though her life was not easy she always had a smile on her face and loved to hear about what was going on with me. She was funny and quirky, and had a crazy sweet tooth (just like my dad ☺️). She loved to shop and collect all different kinds of things, but especially plushes (a love I seem to have inherited 💖). I wanted to create something extra special in her memory, and so this raw vanilla cake was inspired by her love for bears (including Pooh bear), flowers, and all things pink. As many times as I’ve made sweet WTP I realized I’ve never recreated him as his classic version, and it just seemed fitting here. Pooh, Piglet, the piped flowers, butterfly and grass are all naturally colored cashew buttercream, and I used dark 🍫 to outline the shapes. To make it feel like they are sitting in a field of flowers, I added some fresh cut 🌸🌼🌹 as well. It’s hard to accept that she is gone, but I am so grateful that I was able to visit with her one last time, in her home, just days before she went to the hospital. I love you slow much 💜 - There’s definitely nothing wrong with slowing down a bit, in my opinion. It’s always an intention of mine, especially at the start of a new year, to take more time to just be and enjoy the moment I’m in because life can move so fast. Although you also may want to accomplish more than these guys 🤣! Can you tell what my newest tart animal is? These chill creatures can be found in the Amazon rainforest just like the organic açaí berry pulp from @acaiofamerica that I used to make them. Açaí berries are a smoothie staple in my kitchen, as they are very high in antioxidants yet low in sugar, and so I thought it would be fun to try them in a healthy treat beyond my typical açaí bowls. I blended Açaí of America’s Unsweetened Açaí Pulp (which is made from 100% sustainable açaí berries sourced directly from the Amazon) with cashews, wild blueberries, and a little pink pitaya for a creamy, berrylicous dairy- free filling to top the almond cacao crust 😋. Then I used cashew buttercream (tinted with even more of the açaí pulp) to create the fur, and pitaya tinted marzipan along with a touch of dark 🍫 for their faces. They are decorated with berries, flowers and 🐝 pollen. The @acaiofamerica Acai Berry Pulp comes in individual packets making it super simple to add to a smoothie or recipe, and they offer wholesale for foodservice and retail.
