New month - New coffees! 🇵🇪 🇧🇷 On Monday we’ll be roasting and shipping our member coffee. The line up: Filter - a fully washed Caturra/Catimor from the family farm of Linares Garcia in Peru. Espresso - a semi carbonic maceration masterpiece from the Daterra farm in Brazil. Sign up over the weekend to enjoy these in your cup next week.
After a few weeks of testing, tasting and tweaking roast profiles we have almost decided on how we will roast our competition coffee for next week’s contest at @nordicroasterforum in Oslo. The compulsory coffee category is a red honey obata varietal from Costa Rica, and for the other category (F1 Hybrid) we have selected a fully washed lempira from Honduras.
Three new coffees in the roastery (and in the webshop): A natural process Ethiopian heirloom coffee from Uraga is the perfect cup for autumn with a flavor profile of stewed blueberries. From Honduras we have a washed lempira varietal (which we will enter in Nordic Roaster competition in a couple of weeks). Finally a sweet Peruvian coffee with flavor notes of chocolate, hazelnut and white grapefruit.
M A L A W I - Drop of the month for May subscription is a single origin from Sable Farms in Malawi 🇲🇼. A relatively unknown origin in East Africa we’ll roast this for filter to highlight the red berry flavors and roast it slightly different for espresso to bring out the chocolate character a little more. Landing in happy homes around the world towards the end of next week!
WAIT, WHAT!? Shouldn’t the coffee be brown when it comes out of the roaster? We take extra steps to ensure clarity and cleanliness of taste in our coffees - one of those steps includes “cleaning” the green coffee of all dust, debris and stray pieces of coffee sacks by turning the roaster airflow up full blast (but keeping the burners off) and giving our beans a quick spin. One of many such small steps which lead to much better tasting cups in the end. #marginalgains
Who needs milk & sugar!? Some coffees go great with gin & tonic! (Or even just tonic). #Repost@sebastianscoffee with @get_repost ・・・ Today is international gin & tonic day, don't have any gin at home so went with a coffee tonic mixed with spring feeling! 🎉 I used 3 parts @stafsingetonic mixed with soda water, poured it over ice in a glass that I had rubbed with fresh thyme. To make the drink complete I added one part of @muttley.and.jack s beans from Rwanda that I had brewed over ice. 👍 The fir and vinegar flavors got an extra kick from the thyme, the sweet coffee (lime, black tea, and brown sugar notes) balanced the drink perfectly! ☕🎉🌞 Soundtrack: Busdriver - Sunshower
