When you're 2 year old only wants to eat mac & cheese, you trick them into eating mac & veggie sauce πŸ˜‚and they eat the entire bowl and then some!

The "cheese sauce" is leftover roasted sweet potatoes, carrots, broccoli, cashews, Dijon & almond milk all blended together to make an actually tasty faux cheese sauce πŸ˜‰Win for mom!

INGREDIENTS

3/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 drop CASSIA (or 1/2 teaspoon cinnamon)
1/2 cup light brown sugar
1/4 cup granulated sugar
2 tablespoons maple syrup
1/4 cup applesauce
1/4 cup coconut oil
1/2 teaspoon vanilla
1 1/2 cup rolled oats
(mini M&Ms optional)

β–ͺ️Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.
β–ͺ️Mix together the flour, baking soda, salt. Set aside.
β–ͺ️Mix both sugars, maple syrup, apple sauce, oil, vanilla & CASSIA together in a medium bowl.
β–ͺ️Add the flour mixture and stir until blended. Stir in the oats.
β–ͺ️Let sit for 10 minutes.
β–ͺ️Drop by rounded teaspoonfuls onto the cookie sheets. β–ͺ️Bake for 12-14 minutes. Let cool for about 5-8 minutes on cookie sheets then carefully scoop up onto a wire rack.

I love phở 🍲Seriously you guys, it's in my top 5 favorite foods. Sadly whenever I order a veggie phở at a restaurant, the broth never has those lovely spices from star anise, clove, cardamom & cinnamon that I love so dearly.

So, let's make some at home! Here's the basic recipe for the broth. Add whatever veggies, garnishes and condiments you like. I like to use carrots, mushrooms, broccoli & snow peas. Garnish with cilantro, Thai basil, bean sprouts, lime wedges & Sriracha.

For the Pho broth
β€’ 2 yellow onions unpeeled, sliced in half
β€’ 4 inch piece fresh ginger unpeeled, sliced in half
β€’ 6 quarts Veggie Scrap Broth (see previous post for instructions)
β€’ 5 star anise
β€’ 6 whole cloves
β€’ 1 cinnamon stick
β€’ 1 tablespoon coriander seeds (optional)
β€’ 1 pod cardamom (optional)
β€’ 1 tablespoon fennel seeds (optional)
β€’ 1 tablespoon sugar
β €β €β €β €β €β €β €β €β €
Make the Pho Broth
β€’ Set baking rack 8 inches below heating element. Turn oven to low broil. Place the onion and ginger halves, cut side up, on a baking sheet. Brush the halves with a little bit of oil. Broil until the onion and ginger slightly charred, about 10 minutes, turning half-way. Remove from heat and cool.
β€’ Fill a large stockpot (about 12 quart capacity) with about 6 quarts of veggie broth. Add the charred onion, ginger, spices, and sugar to pot.
β€’ Bring broth to boil over high heat, and lower heat to gentle simmer. Simmer about 30-60 min
β€’ Strain the broth through a fine-mesh sieve positioned over a pot. Discard the remaining solids. Taste and adjust the flavor with salt and sugar.

β–ͺ️5-10 drops TOTAL of MELAEUCA, LEMON, FRANKINCENSE & LAVENDER

Simply mix the ingredients in glass bowl (do not use any metal) and apply it in an even layer to clean dry underarms for 10-20 min
