Socca to me!
Socca is a chickpea flatbread/pancake made in a skillet. Equal parts chickpea flour and water. Bake in the oven for 8-10 minutes. This one has been topped with tomato sauce, vegan cheese, sauteeed spinach, pea shoots, roasted tomatoes, avocado, pine nuts and basil coulis.
With nuts? Without nuts?
