Collards are probably one of my favorite things to make. Probably because they can be difficult to make, and because I would consider them (IMO)to be a food that epitomizes poor-folk, southern cuisine(my favorite kind of cuisine).
There’s just something about cooking food that always gets me. The sounds and smells, the preparation of each ingredient, the overall content that nothing else matters except for the pot on the stove and feeding the people close to you. It often seems like I think, “what would I be doing if it wasn’t in the kitchen?”, well I tell you, I still haven’t come up with an answer yet.
