WEDNESDAY, 20TH NOVEMBER - "A Conversation with Fotis & Tim" - Join us in our new lab at Tøyengata 29c for a cozy evening talk where our roaster and barista Fotis and Tim will talk about their recent trip to Finca Tamana and also our own biological farm in Colombia, Finca el Suelo.
Fotis will be serving some of the coffee that he picked and processed at Finca Tamana. The coffee that he spent 5 hours picking and went from 11 kilos of cherry to only 1 kilo of high quality coffee. (see our instagram stories for more detail) Tim will also be talking about the progress made on both farms and show photos from both Finca Tamana and Finca el Suelo. He will also be sharing some of his knowledge about soil biology and talk about the challenges he has had with biological farming practices.
If you are interested in learning more about the process behind the coffee you drink or want to understand a bit more about soil health and how biology grows plants, this will be a light version where you can learn about some big topics while enjoying a cup of coffee at the same time.
This is part of our educational evenings for our team and staff, but we welcome our guests and customers to join this evening to learn about the work we do in Colombia. There are limited tickets available, but that also means there will be plenty of coffee to drink.

I am leaving Colombia after 2 weeks of hard and intense work on our biological coffee farm Finca el Suelo. Our farm is progressing slowly and I am looking forward to coming back In 2020 to plant more coffee trees in these holes we made last week. What coffee cherries at Finca Tamana look like, before they are depulped. All of these coffee cherries are selectively hand-picked by hired pickers under Elias' supervision. They are then hand-sorted before they are processed to make sure only ripe cherries are processed together. Fast forward a few stages and you end up with a clean, sweet-tasting coffee just like the Finca Tamana Variedad Colombia which we have in stock. More precisely, this particular variety of coffee tastes of brown sugar and stone fruit, with herbal notes. . Thank you for the interview Coffee T&I Magazine "Looking back, 10 years ago baristas spent 70% of the training time on perfecting the “craft of how to make espresso and steam milk”, whereas today they spend the most time making guests feel welcome and giving them a good experience, according to Wendelboe. But time has changed. While many renowned coffee shops have expanded with several establishments worldwide, Wendelboe is happy about having only one store. “I personally find it more rewarding to have one store where I feel the quality we are serving our guests is consistent and satisfying.” Wendelboe believes that his shop is known for delivering consistent high quality, sweet, clean, and light roasted coffees. We have just released a limited quantity of the ***Cielito Lindo***, the coffee we competed with in the recent 2019 Nordic Roaster Competition that helped us win both the «Leaf rust resistant hybrid cultivar» category and the overall competition.
As we were testing and roasting this coffee with our roasting team we decided to do three final roasts for the competition with subtle nuances in the roasting profile. At the end they tasted very similar so we submitted one of them for the competition and decided to sell the two other batches for a discounted price to our fans and followers. The coffee was roasted on the 26th of September, but we have packed the coffee in sealed bags flushed with nitrogen to make sure the coffee still taste great. We only have 12 kilos of this coffee for sale in our webshop, so if you want to taste our competition coffee there is no time to snooze.
