So true πŸ’›πŸ˜†@dailyrunbuddy_us Today was a slow start and slow 4 milesπŸ€·πŸΌβ€β™€οΈI'm sore from PumpedπŸ’ͺ🏼Up yesterday but could be my medicine for microscopic colitis and the insomnia it causes too. Knees a bit sore. Was soo HOT wearing pants and long sleeve (apparently 43Β° is shorts and a short sleeve shirt for me ) Whatever it is I DID ITπŸ‘ŠπŸΌ It's best not to look back and compare where you once were to where you are now in running but in most aspects of life too. Focus on the NOW and what you can and enjoy doing right now. Our bodies and lives evolve and change and we must adapt. Stay positive. Try our best. What did you do today? Have HOPE that things will get better in whatever struggles you may be facing. Get up, get moving, eat something healthy, and never give up trying. One of my favorite breakfasts is Overnight OatsπŸ˜‹ My recipe is 1/3 cup #glutenfree rolled oats (quick cook oats works too),2Tbsp GF oat bran, 2tsp chia seeds, 1tsp flax seed, 1 mashed banana or 1/4-1/3c pumpkin purΓ©e, 2/3-3/4 cup of unsweetened vanilla almond milk, 2-3Tbsp protein powder (I use @nuzest_usa ) and or organic peanut butter powder, cinnamon, pumpkin pie spice, stevia or sweetener like raw honey or pure maple syrup. Add Toppings like hemp hearts, nuts, raisins, cranberries. Taste like a thick pudding and can be eaten cold or warmed up. Soaking overnight is better for #digestion and makes the B vitamins more bioavailable. Plus it's delicious. Choosing to improve may mean little things but those add up so don't give up or give in. Tip 2: Fuel for the body and soul. This bowl came together in 15mins with making #zoodles and cooking time. Zoodle and bake at 400Β° until soft (5-7mins) added jasmine🍚rice, green onion, 1/4πŸ₯‘avocado, smoked salmon, coconut aminos, S&P. Side of carrots and dessert of Delicata squash. So yummy. Sunday was always my long run day. I still miss my long runs but until I'm ready and without knee pain or digestive issues I've been doing step and weights. Today was Chest, shouldersπŸ’ͺ🏼biceps, legs, and core after 25mins of step. Don't ever feel like doing something isn't enough. Even a 10min circuit will do your body good. But remember Rule #1 "You can't out Run or work off a bad diet" so proper nutrition and healthy foods is 85% of the equation to better health. My focus here and in the New Year will be HEALTH. Friday Run Day was a HUGE🚌STRUGGLE BUS😝I'm proud of myself. Yes PROUD because I got out and still did itπŸ‘ŠπŸΌRan 4.5 miles. First mile was a run/walk interval as it felt like I was running with a wet blanket on me. Then I ran 3 miles at moderate paces. 2 on a #trail added backwards runs, side sweeps and core. Thankful for Gorgeous🌞perfect weather and wearing shorts and a tank on Dec 1stπŸ‘πŸΌ Sharing my personal journey isn't always easy. I've watched my running fall apart under my health issues with microscopic colitis. I had 2mons that I was doing well but the last 4 days have been bad again and I'm back on meds. It gives me insomnia, headaches and apparently the inability to runπŸ€·πŸΌβ€β™€οΈ I'm trying to figure out why this #flare happened and honestly I think it's #salads and #tofu which makes me sad😩because if you know me, you know I LOVE saladπŸ₯— Raw foods are harder to digest and warmed cooked foods are better for #guthealth So if you're struggling with #tummy issues or might become the #madpooper πŸ’©then consider going off raw veggies and be careful with fruits. Pepto bismuth is anti-inflammatory for the gut. Consider trying it if your digestive system revolts. Sorry for the TMI. But I'd like to help anyone who is dealing with this and hoping to get myself well too. Happy Friday. Tuesday Thoughts: it's a weird thing to raise your son (or daughter) and send them off to #college and know that they have a whole life now that you're not apart of. Saturday Super Breakfast of Pumpkin Spice Multi Grain cereal that's #glutenfree and #dairyfree and oat free too. Swipe right to see what I used but let me say first I'm NOT against oats but it's good to rotate and change what you eat. This is @bobsredmill Might Tasty Hot cereal with several gluten free grains and I added 1 Tbsp of Teff as well. Full of minerals, fiber, & protein this was so filling. Rarely am I not hungry an hour after I eat breakfast but I felt full yesterday for 4hrs!!πŸ˜ƒI'd put this in the #crockpot for a hearty and warm Thanksgiving breakfast. To make 1 bowl use 1/4 to 1/3 cup Tasty Hot Cereal and 1Tbsp Teff (pre-soak overnight for faster cooking. Just cover with water and dash of salt) cover with water, add 3/4 unsweetened vanilla almond milk, 1/4 cup #organic pumpkin, 2tsp chia seeds, 2 tsp ground flax seed meal, cinnamon, pumpkin pie spice, 1tsp molasses, 2 scoops of @nuzest_usa clean #vegan #paleo vanilla #protein (tastes like cakeπŸŽ‚batter🀀) top with 1Tbsp hemp seeds @manitobaharvest and eat that up!! If you make in a crock pot use larger amount and a whole can of pumpkin. Have sides of raisins, cranberries, pecans, shredded coconut, pure maple syrup, stevia. Enjoy. So I now have 10 bell peppers, 3 pears, 4 apples, bag of fingerling potatoes and super greens. Meal PrepπŸ˜ƒWooHoo! These Stuffed Bell Peppers were soo #yummy Ok so I rarely follow a recipe. I tweek it and get inspiration from others recipes and develop my own often based on 1) food I have on hand 2) my food preferences or intolerances 3) creative flare. I happened to score a bag of 6 organic red bell peppers @naturalgrocers and I had a yellow bell pepper, mushrooms, onions, frozen organic white corn, canned lentils (and beans are always in my pantry) green onions and curried organic brown rice that I had already cooked and frozen in batches (I always have rice, quinoa, #glutenfree noodles on hand and cooked) mixed it up with spices, herbs, salt and pepper and stuffed the bell peppers and baked at 350Β° for 35 mins. I took inspiration from @whitneyerd and her tostada recipe from the predominately plant-based meal plan that I've been trying out this week. I will also say that I can eat, and usually do eat the same thing for 3-4 days. So these babies are #lunch through Wed. Try it out. Let me know. Yum. I'm loving oatmeal and this is @whitneyerd Super Seed oatmeal but prepared as #overnightoats Mix your regular oats with seeds and I added #pumpkin and spices and #hempseeds on-top. Hey Pizza PartyπŸ˜ƒπŸ• @ivegotthetrots and I are at it again with my #vegan and #plantbased pizzas loaded with veggies and #dairyfree and #glutenfree Started my day with super seed oats from @whitneyerd and joining her this week with her Predominately Plant Based Meal Plan. I moved a few recipes around and made this pizza. Quinoa crust is easy!! Soak 1 cup quinoa over night with sea salt, drain, rinse and put in blender or food processor. Add 1-2Tbsp apple cider vinegar, 1tsp baking powder and nutritional yeast, 2-3 cloves of garlic, 2Tbsp of almond flour or and GF flour will work. PurΓ©e until smooth. Spread on parchment lined stone or pan and bake at 425Β° for 15mins and then flip and bake for another 5mins. Load on toppings: Pesto or red sauce, mushrooms, zucchini, bell peppers, onions, tomatoes, spinach. Can add vegan pepperoni or sausage too. Seriously. Vegan, gluten free muffins and swipe for smoothie bowl. All plant based nutrition #ppd with @whitneyerd These yummy muffins are made with 1 ripe🍌, 2Tbsp each of GF oat flour, coconut flour, brown rice protein, spices (lots!) vanilla, 1 container of flax milk vanilla yogurt, flax egg, tsp baking powder, 1/2tsp baking soda, dash salt, @enjoylifefoods mini chocolate chips. Bake at 350Β° They're yummy. #neverwasteabanana And my smoothie bowl inspired by @lilsipper with frozen diced zucchini, spinach, blueberries, 1 scoop of @nuzest_usa vegan strawberry protein powder.
