The hotel’s restaurant serves this delicious dessert on the "Manufacture Rock” collection: chocolate brownies with raspberries Here’s the recipe: Ingredients: Chocolate brownies 5 eggs 125 g sugar 60 g honey 160 g cane sugar 250 g butter 160 g dark chocolate 150 g nuts, finely ground 60 g flour Raspberry sorbet 500 ml raspberry purée 50 ml rum 100 g sugar 1.5 g agar-agar Raspberry jelly 250 g raspberry purée 50 g icing sugar 2 g agar-agar Preparation: Chocolate brownies • Grease a baking tray/springform tin with butter and dust with flour. Preheat the oven to about 170 °C top/bottom heat. • Finely chop the chocolate and melt with the butter in a small pan over a medium heat, stirring regularly. Then remove from the cooker and stir until smooth. • Use a blender to whisk the eggs with the sugar and cane sugar in a mixing bowl until light and fluffy. Stir in the melted chocolate and the honey until the mixture is light and creamy. Then add in the flour and nuts (stir in briefly) – preferably by hand with a whisk to avoid overmixing it. • Then spread the mixture into the tin (half a baking tray) and bake in a preheated oven for about 30 minutes. • Leave to cool after baking. The baked brownies are slightly moist/very juicy inside. Then cut into pieces and serve. Raspberry sorbet • Boil the sugar with the rum, simmer for 5 minutes and then leave to cool. • Fold the sugar syrup into the raspberry purée. • Put in the freezer for at least 4 hours and stir with a fork every hour. Raspberry jelly • Mix all of the ingredients together, pour into a pan and bring to the boil quickly. • Leave to cool, then mix again and pour into the moulds. It`s taco time 🌮 – enjoy delicious fish tacos with pineapple and cucumber salsa in our "it`s my match" bowl. Here’s the recipe: Preparation time: 25 min. For: 2 portions/4 tacos Ingredients: 300 g white fish fillet (e.g. cod) 3 tablespoons soft flour 1 teaspoon ground coriander Salt, pepper 6 tablespoons sunflower oil, for frying 150 g cucumber ½ red onion 200 g peeled pineapple 50 g radicchio 1 small red chilli 5 sprigs of fresh coriander 2-3 tablespoons lime juice 1 tablespoon olive oil 4 corn tortillas Preparation: 1. Divide the fish fillet into bite-size pieces. Mix the flour and coriander in a deep plate and season with salt and pepper. Toss the fish pieces in it until they are completely covered. Heat the sunflower oil in a pan and fry the fish for 2-3 minutes on each side until golden brown. Remove from the pan and drain on kitchen paper. 2. To make the salsa, wash and dry the vegetables. Cut the cucumber in half, scrape out the seeds with a spoon and cut into smaller pieces. Peel the onion and chop finely. Remove the hard pineapple stem and cut the pulp into small pieces. 3. Cut the radicchio into narrow strips. Remove the seeds from the chilli and slice into thin rings. Wash and dry the coriander and then chop coarsely. Mix the cucumber, pineapple, radicchio, chilli and coriander in a bowl and season with lime juice, olive oil and salt. 4.
