Did you know that technically butternut squash is a fruit?

Serves 2
1 x BUTTERNUT SQUASH
Rocket
10 cherry tomatoes, halved
2 tbsp pumpkin seeds
1/2 avocado
Olive oil
Juice of 1 lemon
Sea salt
Ground black pepper

Slice butternut squash in half lengthways and remove seeds.
Brush oil over the squash and roast for 45 minutes.
Add salad ingredients to a mixing bowl, season.
For the last 10 minutes of roasting, add pumpkin seeds to baking tray, and mix with existing oil, if desired. Otherwise add to salad raw.
Plate up and enjoy!

Below is the recipe for the strawberry cupcake, you can find the rest online at victoriaadams.co.uk using @rawnice .

STRAWBERRY CUPCAKES RECIPE
225g almond flour

pinch salt

1 tsp baking powder

1 tbsp xylitol

3 eggs

1/2 tsp Apple Cider Vinegar

1 tsp vanilla

4 tbsp coconut oil

1 tbsp lemon juice

100g slices strawberries, plus extra for serving

METHOD

Line a muffin/cupcake tin with paper cups (or use silicon moulds) and preheat oven to 175C.

Sift dry ingredients into a bowl.

Beat in eggs, followed by wet ingredients. Mix well until smooth.
You can use a blender for these recipes if you wish, but I think it’s easier to do this by hand!
Pour mixture into cupcake moulds and bake for 20-30 minutes or until golden (or blue!!) in colour.

BLUEBERRY + POMEGRANATE CHEESECAKE

BASE INGREDIENTS
108g Almonds
75g Coconut flour
108g soaked dates
3 tbsp coconut oil
3 tbsp cashew butter
½ tsp vanilla
pinch sea salt
1 tbsp lemon juice

Pulse all together in food processor to make the cheesecake base. When a dough like consistency has formed, transfer to a silicon mould or cling film lined-cake tin and press firmly into base.

CHEESECAKE INGREDIENTS
108 mls maple syrup
250 mls coconut milk (chilled)
50 mls coconut oil
10g xylitol
2 tbsp fresh lemon juice
325g cashews, soaked and drained
1 tsp vanilla powder
150g blueberries
2 tbsp blue spirulina powder

Blitz all ingredients except blueberries and spiriting in blender (it’s helpful to add liquids to jug first, to prevent the blender from clogging). When smooth, pour ½ of filling onto cheesecake base and chill until firm.

Blend berries and blue spirulina powder with remaining cheesecake filling, and when the white layer is set, pour on top and return to chill in fridge or freezer.

POMEGRANATE DRIZZLE SAUCE
Juice from 1 pomegranate
2 tbsp maple syrup or agave
1 tsp beetroot powder

Blend and drizzle.

Rose Beetroot + Pistachio Granola

Tahini ½ cup
⅓ cup maple syrup
1 tsp Vanilla pods or powder
½ tsp cinnamon
1 tsp beetroot powder
¼ tsp sea salt
2 cups oats
1 cup pistachios

Rose petals

Preheat oven to 180C.
In a large bowl, combine maple syrup, sea salt, vanilla, cinnamon, beet powder and tahini. Stir well.
Stir in oats and pistachios.
Spread out thinly and evenly onto a lined baking sheet, pressing the mixture together.
Bake for 10-15 minutes, then remove from oven to flip. Bake for another 5-10 minutes.
Stake and stir granola a little in between baking.
Allow granola to cool, then toss with dried rose petals.

Buckwheat - or kasha - porridge was my staple when I was living in Russia. It’s great in both sweet and savoury dishes, and brilliant at curbing your appetite. Buckwheat helps reduce cholesterol, hypertension and improves digestion. Like quinoa, buckwheat is a “pseudograin”. Despite its name, it is gluten-free and wheat-free. In actual fact buckwheat is a seed which is packed with vitamins and anti-oxidants and you can use it to make flour, pancakes, even noodles and stir frys.

CHICKPEA CURRY

Part influenced by my trip to India, part trying to use up ingredients in my cupboard!

1 onion, 2 cloves garlic, ghee, 1 star anise, 2 black cardamom, 1 tsp cumin seeds, 1 tsp coriander seeds, 1 can chickpeas, filtered water or 1 tin coconut milk, 1 tsp turmeric, 1 tbsp garam masala.

Optional: pumpkin seeds to top

If making healthy desserts is too time-consuming to keep you interested, this is for you.

INGREDIENTS
½ honeydew melon
2-4 fresh strawberries
1 tsp desiccated coconut

Optional extras: honey or maple syrup (but not really necessary), cacao powder

Scoop out seeds from ½ a melon, and decorate with sliced strawberries into a mandala shape. Scatter coconut and serve.

350g dates (soaked 15 mins in water)
200g (1 ¾ cups) ground almonds (almond meal)
50g desiccated coconut
¼ tsp baking powder (optional)

Extra @omgmatchatea Matcha powder and coconut, to dust

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit). Drain water from soaking dates and food process into a smooth purée (leaving a little water will make this easier). Add mixture to a medium bowl, stir in other ingredients and mix well.
Transfer to an 8-inch square greased + lined baking tin and bake in oven for around 15 minutes.

For topping: Pulse some matcha powder with dedicated coconut in food processor to combine. Let cool before applying the desiccated coconut matcha frost.

ANTI-INFLAMMATORY CAULIFLOWER RICE with Turmeric-Scrambled Eggs

Cauliflower Detox Rice
Serves 2-4 (depending on whether a side or main dish)
1 medium cauliflower
1 onion, diced
2 cloves garlic, crushed
1 tbsp grated ginger
2 tablespoons Nama shoyu/Tamari
½ tsp turmeric powder
2 eggs, beaten
1 spring onion (whites chopped, green reserved for garnish)
2 carrots, grated
1 cup brussel sprouts or spring greens, shredded
1 tsp sesame seeds
1 tbsp coconut oil or ghee

Using a food processor, pulse cauliflower into a rice-like consistency.
In a small bowl, whisk Nama Shoyu and ginger together.
Heat 1 tbsp ghee or oil. Add garlic, onion and heat until translucent. Add cauliflower and cook for 2-3 min.
Add Brussels and carrots, and continue to cook on medium heat.
Whisk eggs and turmeric powder and, in a separate pan, scramble until cooked to desired consistency.
Add Nama Shoyu mix and eggs to the vegetables. Stir for another 1-2 minutes, and serve.
